Buckeye Balls II

So yummy! I followed the recipe exactly but didn't sift the powered sugar. Turned out great. At first, they seemed a little too sweet. But once the balls were in the fridge for a couple of days it seemed the refrigeration helped with that. I'm expecting these to be a crowd pleaser this evening for Christmas Eve dinner.

Stir Fried Kale

This wasn't very good. There wasn't enough oil to soak up the bread crumbs and so the kale didn't "wilt". It never really cooked and we ended up eating kale with dry breadcrumbs that were somewhat burnt a bit that didn't coat. I didn't want to add more oil as this just made it more unhealthy. I've seen some other reviewers comments that you have to add moisture to this dish which I would advise if I were going to make a modification to it.

Classic Goulash

This was "ok". I used different noodles because I just don't care for the elbow macaroni. I omitted the soy sauce because even the low sodium soy sauce has quite a bit of sodium in it. I would probably make again but would make some variations to see if I could make it a little more flavorful.

Spinach Quiche

This was very easy to make and good. I doubled the recipe and made two pies. I must say, I had enough with just the eggs for one recipe to cover both pies almost. Everyone really liked it and I would make it again but add some variations to it probably.

Carrie's Bruschetta Appetizer

This recipe was pretty simple but it was a little daunting to have to seed and chop the tomatoes. Next time I may have to do diced tomatoes from a can instead. Also the cheese "spread" was very thick and although the recipe calls for blended the cream cheese and feta cheese, your may scratch your head and bit and wonder with a blender? (DON'T use a blender, lol). I did have to add a little milk to it (heavy cream probably would have been better) to get it a little creamier to spread on the bread. Otherwise I would make it again and made a few variations too.

Stuffed Cabbage Rolls

I probably wouldn't make this again. It actually required 2 cans of tomato soup (which I bought an extra can because I had a feeling) and even that wasn't enough. The bottoms of at least 2 of the rolls were almost burnt had I not flipped them. This is the basic, bottom of the barrel cabbage roll recipe that even a first time cook could make. I would deviate highly from the recipe to add more flavor and might even bake them if I had never made it before.

Terrific Turkey Chili

I searched for a chili recipe with turkey meat to make for Super Bowl Sunday. The reviews for this recipe were so impressive and so was the recipe! I made 2 batches due to the size of our group and the only things I changed is I used garlic ground coriander, added a can of black beans and also added some more chili pepper flakes as we like it spicy down here:) Didn't need to add any water as the beef broth had enough liquid. The flavor was incredible and everyone loved it. This is definitely going down as an all time favorite recipe and I will make many times over!

Honey Apricot Pork Chops

This was a really easy and delicious recipe. I served it with a nice Pinot Grigio white wine and it paired really well with this dish because it was sweet. I will definitely make it again!
