Original Irish Cream

Awesome! I gave small bottles of this away at Christmas and everyone loved it. I used light cream and low fat sweetened condensed milk and it still tasted great. Next time I'll dissolve the coffee granules in a tiny bit of warm water. They didn't like trying to dissolve in the cold.

Chocolate Frozen Yogurt

This was my first foray into the world of frozen yogurt. I couldn't have been happier with the result. I used Lindt 70% dark chocolate and brown sugar for extra richness. I added 3 tbs of cornflour as suggested previously and forgot to get evaporated milk so I just used a cup of low fat milk instead.

I was initially a little suspect that these weren't going to work so well, but they came out beautifully. Puffing up very nicely. We followed Bijay's suggestions about cooking one side for 5 sec and then flipping. Would not hesitate in making these again. I scaled the recipe down to 4 rotis and it was fine. Brushed on some melted butter & garlic at the end.

Lighter Banana Muffins

Very happy with the way these turned out. I didn't have bananas, but used 1 1/4 cups of apple & cinnamon pie mix. I was able to get 12 muffins from the recipe.

Easy Granola Bars

These are good. They hit the sweet spot, without being over the top. I only used 3 cups of oats, 1 cup of Special K cereal & 100g chopped dates. As well as 1 tbs butter and low fat sweetened condensed milk. The oats are pretty energy dense, so I'm going to substitute other cereals next time and add dried apricots as well. This is a great basic recipe.

Best Chocolate Chip Cookies

I have persisted with this recipe for three batches. One of which I did add more brown than white sugar, varied the amount of butter and still I am not impressed. Just not the recipe I'm after obviously.

Yogurt Cake

Any recipe that can withstand substitutions gets my vote. I used 3/4 cup of oil instead of magarine, added orange essence instead of lemon and used peach & mango yogurt because that's what I had on hand. It came out moist and went down very well.

Miso Soup

This is a great recipe. It finally gave me the courage to try miso soup at home. Its too easy, I'm kicking myself for not trying this earlier and this is now a keeper! I used yellow miso paste, fried bean curd pieces cut in half and added some spring onions (not sure if these are the same as green onions - probably).

Grandma's Raspberry Bars

These are good! I just served them for morning tea. I didn't follow the recipe exactly - I used peach jam, cooked it in a 9x9 inch baking dish and failed to read the recipe and only mixed a 1/4 of the mixture with the oats and walnuts - so my topping is super crumbly. Still its worked out fine, tastes good and I'll be making this again.

Pasta Broccoli Bake

I love this recipe - so easy and it give me lots of left overs (I do scale the recipe down to 4 serves). I usually add more veges - roast pumpkin, corn, mushrooms and whatever else I have on hand. Also use a little less pasta and low fat milk & low fat cheese. Great for carbo loading!

Beat and Bake Orange Cake

Nice light cake. Perfect for morning tea and using up some excess oranges. I only had a cup of icing sugar for the icing rather than the 2 it called for so I used a 1/2 cup of light cream cheese instead. Placed the icing in the middle and stacked the other cake on top. Worked a treat.

Can't Tell They're Low-fat Brownies

Don't do what I did and try and make these diabetic friendly too! My Grandfather (he's diabetic) didn't touch them! I used 1 cup of nutrasweet instead of 1 cup of sugar. They came out more cocoa tasting than chocolate tasting - I wasn't a fan. I ended up making an icing for them with instant low fat/ sugar free chocolate pudding. They were a little more bearable this way. I'm sure they would have been great had I not tampered with the recipe. Mind you my cousins loved them because they weren't too sweet!!

Jewish Coffee Cake

This cake did impress my workmates for morning tea - they loved it!!! A definite keeper. I also used low fat sour cream and brown sugar in the topping and cooked in an 8x8" pan for allotted time.
