Gorgonzola and Apple Pork Chops

I am a huge believer in making recipes according to your own tastes, so when I made this, I knew exactly what to do. First I cooked 6 slices of bacon and left the bacon fat in the pan. I then cooked the pork in the bacon fat. When the chops were done, I spooned out extra fat for my roasted potatoes that I was cooking that night. I put in the mixture 2 fuji apples, bleu cheese, and the crumbled bacon in the pan I had deglazed with white cooking wine. Wine, bacon fat, cheese, apples, YUM! I also added a splash of balsamic and let it cook down. Because my "stuffing" was too loose to stuff, I just served it on top. This is a GREAT recipe to make your own!

Apple Nut Muffins

No apple flavor, not enough cinnamon, and I even added 1 tbsp. to the batter. The major problem:too much baking soda!!! I even cut down half a teaspoon. Will never make again!

Spicy Shrimp and Grits

This turned out terribly for me. This ended up very watery when I took it out of the oven for 45 minutes. Although, when I took it out of the oven and put it on the stove with corn starch to thicken it, the flavor was wonderful. I will not put this in the oven next time.

Bacon Wrapped Dates Stuffed with Blue Cheese

I made these this past Christmas and am pulling it up again for the recipe, so thought I would review. I used Mejdool (spelling?) dates and stuffed with a mix of chopped smoked almonds and blue cheese. I let the bacon soak up some brown sugar before I wrapped the dates. I used thin bacon and had no problem with it cooking in 30 minutes, 15 minutes per side. I used skewers and put several on a skewer on a broiling pan to let them drip. TO DIE FOR!
