Chocolate Chip Cookies (Gluten Free)

These are great chocolate chip cookies and the first that I've made that didn't get flat and runny. I took advice of others: decreas brown sugar by 1/4 cup, increase flour by 1/4 cup, used 2 eggs (no egg allergies). Mine cooked for 12 minutes, they were crunchy outside and chewy inside - perfect. I kept the dough in the fridge while the others cooked so the dough wouldn't get soft/runny. Cooked on parchment and no issues with sticking. My daughter tasted one right out of the oven and asked for more. This is a keeper.

Slow Cooker Chicken Taco Soup

This was really easy and delicious. My kids have 3rds. I only made 2 changes 1) used chicken broth instead of beer 2) used diced tomatoes without chilis and added a 4oz can of chilis. I used the taco seasoning suggested by one reviewer and it was PERFECT! This is a keeper, thank you.

Linguine with Clam Sauce

This was SO good and easy to make. My husband who grew up on the coast said, "It's the best ever" and my kids (6 and 8) loved it too. I made a couple of changes based on other reviews. I used 1/2 the butter, olive oil instead of veg oil, 3 cans of clams (1 minced, 2 chopped), more basil, and added 1/2 T oregano. Also, I added about 1/8 C parmesean, 1/8 C pasta water and 1/4 C milk to help it thicken. I served it over gluten free pasta and it was amazing. We are fighting over who gets the small amount of leftovers tomorrow :-)

Mom's Turkey Sausage Patties

This is amazing and tastes EXACTLY like sausage without all of the fat and additives. I used one package (1.3oz) of turkey and doubled the spices except for the cayenne (kids). My family loved this and we fought over the leftover patties the next day. This recipe is a keeper and I know I'll make this again and again.

Chewy Chocolate Chip Oatmeal Cookies

I love oatmeal cookies with chocolate chips and this recipe fits the bill. I'm a Dietitian so I modified this recipe to make it a bit healthier without losing the yummy goodness. I cut the butter by 1/4 C and used applesauce in it's place. Also, I used only 3/4 C brown sugar and 1/3 white sugar. I left out the salt like others recommended with the buttered salt and I used 3/4 C all purpose flour and 1/2C whole wheat flour in place of the full amount of flour. I didn't change the eggs, but you can use 2 egg whites in place of 1 whole egg to cut some of the fat/cholesterol. Anyhow, long story short....MY FAMILY LOVED THESE COOKIES and this recipe is a keeper even with the substitutions.
