We really liked this! I used chicken thighs instead of breasts, and also added a cup of chicken broth, although it didn't really need it. Next time, I will mix the diced tomatoes with the spices, and then pour them both in together. I served it over rice, and my 2 year old daughter and I both enjoyed it.

Apple Pie by Grandma Ople

This pie is PERFECT. It is simple, and delicious. Don't waste your time adding cinnamon and nutmeg, the flavors just get in the way. I always bake it at 425 for 15 minutes first, and have never had it scorch. I definitely put a cookie sheet on the rack below in case anything drips, though. If you slice the apples thin, they turn into a kind of applesauce, and it's a much more tart pie. Thick slices make for a more traditional apple pie. Seriously, this pie is PERFECT. Don't try to "improve" it.
