This pie is PERFECT. It is simple, and delicious. Don't waste your time adding cinnamon and nutmeg, the flavors just get in the way. I always bake it at 425 for 15 minutes first, and have never had it scorch. I definitely put a cookie sheet on the rack below in case anything drips, though. If you slice the apples thin, they turn into a kind of applesauce, and it's a much more tart pie. Thick slices make for a more traditional apple pie. Seriously, this pie is PERFECT. Don't try to "improve" it.
