Lemon Garlic Tilapia

Super easy and very good. I sprinkled with cajun seasoning and used evoo instead of butter. Delicious! I also baked at 400 for about 12 minutes. This will be added to our regular rotation.

Beef Fajita Marinade

Boy is this good! I thinly sliced strip steak and let it sit in the fridge for several hours in the marinade. Then I sauteed onions and mushrooms with the meat. Served it with tortillas, fresh cilantro, homemade salsa, mexican cheese and sour cream. My husband and my two year old loved it. I wouldn't change a thing.

Poor Man's Pepper Steak

This was pretty good and the meat was really tender. Next time I will add some soy sauce and maybe thicken the sauce before serving. I missed that asian edge that most pepper steak recipes seem to have.

Blend of the Bayou

We tried this last night and it was very good. I hate it when people change the recipe and then rate it but I did make a couple of changes out of necessity. I used colby jack instead of cheddar cheese and I used a whole teaspoon of cayenne instead of a half teaspoon. Next time I will omit the cream cheese(made it too creamy) and add more veggies and a can of tomatoes. Overall it was very good and my picky husband gave it four stars. Thanks!

Unstuffing Side Dish

This is my Southern Dressin' Recipe except it's missing the pan of cornbread. I like mine made like a moist cake in a 9 X 13 casserole. And I usually go ahead and use a whole lb of sausage. We look forward to this every year!

Spinach Brownies

These were yummy! Usually I don't change a recipe the first go around but I was short on Mozarella by a cup and so I used half mozarella and half swiss. Next time I will use all swiss or maybe so parmesan. Also a small kick of cayenne or hot sauce might be nice. Overall this is just great! Thanks for the recipe.

German Sausage Chowder

This is really yummy comfort food. I didn't have potatoes so I used egg noodles instead. I will dice the sausage next time and put the shredded cheese on top (it was gummy mixed in the soup) but otherwise it was great!

My Mom's Swiss Steak

This was awesome! I made a few changes out of necessity (didn't have the exact ingredients) but it turned out great. I sprinkled the beef with Tony Chachere's seasoning before browning and added a 28 oz can of whole tomatoes (which I zapped with my stick blender a few times to chop them). I didn't fool with the cornstarch as the "gravy" was great just as it was. I added fresh mushrooms but didn't have green peppers or celery. Served it over mashed potatoes with a slice of french toast and it was just great. Will make again and again. Thanks!
