Burgundy Pork Tenderloin

Reviewed: Jul. 24, 2007
This was really good, but I will be making some changes next time. I will saute the pork in some EVOO before baking. I think I will also omit the onions and celery...it didn't do anything for the flavor and I had to strain the "gravy" before thickening. The wine flavor was too overpowering so I did end up adding about 3/4 c. of water. I will add some mushrooms next time too. I think it will go well. Thanks for the post.

Parmesan Crusted Salmon

Reviewed: Jul. 23, 2007
I like other reviewers had trouble keeping the "Parm crust" on the fish. Other than that...the taste was amazing. I liked it and hubby said it was excellent. The only complaint was the presentation, it did look a little messed up with part of the crust on the fish and the rest of it stuck to the pan and the spatula. Thanks for the post...might try baking next time (and broiling at the end).

Pretzel Turtles

Reviewed: Jul. 22, 2007
OMG these are amazing. I love the candies and saw this recipe...thought "why not". Seriously the fact that it took me less than 15 minutes from start to finish is dangerous because I know I will make these all the time. I am going to make sure I keep this on file for Christmas gifts. Thanks for the post.

Salmon Chowder

Reviewed: Jul. 6, 2007
This is amazing and SO EASY. First time I tried to make my own soup and glad that I did. Hubby is such a grouch from soup in the can so I tried this...now I am in trouble because he knows I can make soup now. I did use fresh salmon (and just cooked it in the soup). I can't imagine that it would taste as good with the canned stuff. Had NO LEFTOVERS...and that is amazing since I doubled the recipe to freeze some for later (since other reviewers suggested that). Definate thanks for the post....will be made many times more in our rotation.

Pork a la Steve

Reviewed: Jul. 6, 2007
This was really good...I served for hubby's friend who came for dinner. Did use the grill pan and had to reduce the heat level because the natural sugars started to burn a little bit. I cut the pork into medallions to stretch it out a bit. I also decided to add just a little bit of grated fresh ginger to the marinade....thought it would work well, and it did. I halved the marinade and reduced the second half on the stove to make a thick sauce...to pour on top of white rice and the finished pork. Really good stuff...thanks for the post.

Slow-Cooked Oriental Chicken

Reviewed: Jul. 1, 2007
This was not our favorite slow cooked oriental chicken recipe. The sauce was ok....but I doctered it up by adding just a little more brown sugar, some honey, orange zest, and thickened it up with some cornstarch. I also added some green onions. The sauce before I tinkered with it was ok....after hubby said he really liked. Thanks for the idea.

Creamy Fruit Dip

Reviewed: May 31, 2007
This is delicious. Made it for my sister's graduation. I love the taste the vanilla gives to it. I also added some orange zest to give it some color and a bit more flavor. Definately a keeper, thanks for the post.

Cheese Garlic Biscuits II

Reviewed: May 31, 2007
I've rated these before...but my rating is gone. I followed the recipe exactly and they do turn out like the biscuits that you get at the restaurants....delicious. One of our favorite biscuit recipes. Thanks for the post.

Grilled Lime Cilantro Ahi with Honey Glaze

Reviewed: May 31, 2007
I thought this was really good, but hubby said it was way too sweet. I added some toasted sesame seeds for a little crunch and followed the recipe exactly. My honey glaze was a little thick so I just spooned it over the hot tuna and it melted beautifully. I will definately make again. Thanks for the post.

Easy Batter Fruit Cobbler

Reviewed: May 31, 2007
I had some frozen berries that I didn't know what I was going to do with...came across this recipe and tried it. It was ok...I do agree with some of the other reviewers who said that they thought the butter batter ratio was off. The batter turned out very thick for us and was too much for fruit (which all sank to the bottom of the cobbler). I think I will keep my other recipe for this. Thanks anyway for the post.

Mrs Espy's Enchilada Sauce

Reviewed: May 20, 2007
Ok...I made the mistake of making this without reading the reviews...big mistake. The way the recipe is written is really, REALLY bland. I like the idea of being able to make my own sauce, but I would have to doctor it up quite a bit to get it the way that we like it. As written it's ok....but it could be great. Thanks for the post.

Party Punch VII

Reviewed: May 19, 2007
This is always gone at any party I use it for. I have tried this several time swith different kids of juices (per the advice of Navy Mommy), and it really does work with any kind of juice. I do like some better than others, but all turn out well. Thanks for the post.

Baked Asparagus with Balsamic Butter Sauce

Reviewed: May 8, 2007
This was just ok for us. I was not a huge fan of asparagus until I found a recipe on here that I liked. We really didn't like this one as much. I don't know if it was because I misread something or it just isn't for us. I will stick with my tride and true recipe of just sautee it up in a bit of EVOO and butter...then top it with some parm. cheese. Thanks for the post anyway.

Old Fashioned Onion Rings

Reviewed: May 2, 2007
These were good, but we prefer a wet batter when we fry up our onion rings. Nothing wrong with this recipe, we just didn't like the breadcrumb batter as much. Thanks for the post.

Mom's Good Cinnamon Rolls

Reviewed: Apr. 15, 2007
Added more cinnamon and sugar because of the reviews that stated the dough was a little bland. I did want a gooey sticky type cinnamon...and this was not. I do think I will continue to look for a recipe that better suits our tastes. Thanks for the post.

Chicken Saltimbocca

Reviewed: Apr. 15, 2007
This was good. I did dredge the chicken in seasoned flour before hand. I liked how it turned out. It didn't wow me, but I would make it again. Thanks for the post.

Cream Cheese Squares

Reviewed: Apr. 6, 2007
This was really good. I was craving cheesecake, but really didn't want to spend the time making one....this was the next best thing. I did only add 1/2 cup of sugar, and brushed the top instead of drowning it in all that butter. I added just a little lemon juice too. I sprinkled just a touch of cinnamon on top (reduced that too). Next time I will omit that and just make a simple icing to drizzle on top....could be almost like a danish. Thanks for the post.

Chicken Flautas

Reviewed: Apr. 3, 2007
I liked these. Since the portions were so large (because of the amount of filling it made) they were more like chimichangas....which is what I wanted them to be. They turned out very nice and crispy. I served with sour cream, guac. and some lettuce. Thanks for the post.

Fried Apple Pies

Oh I have been looking for something like this for a while. This was exactly what I wanted. I had some icing that I made up for something else and drizzled it over. What a treat. Thanks for the post.
