Pumpkin Gingerbread

I used 15 oz frozen pumpkin pulp from Halloween, and added 7 oz okara (soy bean pulp loft over after making soymilk). I only used 1/2 c oil, increased to 1 c water (maybe too much), added about 2 Tbsp of molasses, and used 2 Tbsp ground ginger (I might use 3 next time). I used small loaf pans, but it was a little too moist to cook evenly.

Rhubarb Pudding Cake

Great with ice cream. Really quick and easy and so delicious. I've used fresh Rhubarb, but if I use frozen rhubarb, I need to thaw it before the baking process, right?
