Delicious Pineapple Muffins
These muffins were OK; nothing special. I read the reviews and used room temp butter, along with folding the crushed pineapple into the batter for flavor and moisture. The taste was decent, although what really ruined these muffins for me was how they stuck to the muffin papers. Half of the muffin was stuck to the paper, which was a huge bummer. If these tasted more complex, I might consider trying to make them again and adding a tablespoon or two of oil to the batter, but I'm not motivated enough to do that considering that I like more complex, layered flavors.
