Crab Pasta Salad

Reviewed: May 20, 2003
I made this for a bridal shower recently, and it was a sure hit. I didn't have any Italian dressing on hand, so I mixed in olive oil, spiced Balsmic vinegar (garlic with sun-dried tomatoes) with a hint of spicy mustard dressing. It was really good! The imitation crab and crunchy veggies was the best part.

Garlic Parmesan Chicken

Reviewed: May 20, 2003
My friend Susan made this last weekend, and I've never tasted such tender chicken. The butter really seems to gives it a full rich flavor while the french-fried onions give it an unexpected crunch. Goes well with about any side dish.

Chicken Enchilada Casserole II

Reviewed: Jul. 24, 2003
This lasted me almost 3 dinners! Next time I'll substitute with fresh medium temp salsa and less sour cream. Otherwise, this was a great entree that I'll fix again!

Rory's Most Wonderful Corn Bread

Reviewed: Jul. 24, 2003
A great cornbread recipe. Next time I'll use uncooked broccoli and shredded carrots for added texture and flavor. The cottage cheese really made it moist and rich.

Squash Stuffed Chicken Breasts

Reviewed: Sep. 26, 2003
This was surprisingly good. I didn't have celery or green peppper on hand, so I used califlower, acorn squash, onion and colby cheese, it was great! I'll make this again for guests this time.

Pecan Breaded Chicken Breasts

Reviewed: Oct. 1, 2003
To cut down on fat, I baked the chicken breasts. I didn't have maple syrup, so I substituted using honey. The pecans got a little burnt, but still had lots of flavor. I will make this again, thanks for the recipe!

Baked Dijon Chicken

Reviewed: Oct. 7, 2003
I substituted evaporated milk with 2%, and it tasted great. The chicken breasts were whole, so I baked it 30 minutes total. This is low in carbs and fat, and I will certainly make it again for guests.

Caramelized French Toast

Reviewed: Nov. 5, 2003
This sure tasted like cinnamon rolls, but you must eat it fast as the sugar starts to harden immediately. I made sure to melt the brown sugar in a sauce pan and not the frying pan, as it will harden and crystallize. I will try this again!

I made this for New Years Eve and it turned out rich and smooth. I used International flavored coffee instead of instant coffee granules. Recommended!

Mongolian Beef II

Reviewed: Jan. 27, 2004
My fianci gave this 2.5 stars, I would give it 2. This definitely lacked flavor and heat. Next time I will try adding garlic, ginger and more sugar and kick up the crush pepper. Try adding water chestnuts for extra texture. Might try again.

Simple But Awesome Lemon Pepper Pork Chops

Reviewed: Feb. 24, 2004
This is a great, easy recipe. They were very tender and a bit spicy. I froze the leftover juices for later use since the flavor was so good.
