Croissants

Reviewed: Jul. 2, 2012
This was a very good recipe. I did do things a LITTLE bit different but they came out great! Change 1: Added 2 tsp yeast Change 2: Put the butter into a plastic bag and rolled it into a 6 inch square, then put it in the freezer. Change 3: Instead of chilling my dough in the fridge between "turns", I put it in the freezer to chill. Change 4: I sprayed croissants with water before baking them. So, my changes were not big or anything! Very easy recipe! I am not an amateur cook or baker but this is only my second time making croissants (The first time was in culinary school 11 years ago!). The final product was golden, buttery, and flaky though may need a tad more flavor, which is why I am giving 4 stars instead of 5. Thanks!

Chocolate Chocolate Chip Cookies I

Reviewed: Jul. 14, 2009
Very good cookies. I added a little more cocoa and a tad more vanilla for my tastes. They came out perfect! A little crisp on the edges, nice and soft in the middle.

Butter Cake

Reviewed: Dec. 8, 2008
I read through the reviews hoping that when I made it that it wasn't like cornbread....it was. It had the texture of cornbread. But it still tasted good and looked pretty!!! I wish I knew why it was like cornbread because I beat the heck out of the butter/sugar mixture. Maybe I will have to try cake flour. But it was still very yummy!

Hot Fudge Sauce

Reviewed: Aug. 11, 2008
Very delicious! I made minor changes: 1 squares unsweetened, 2 squares semi-sweet, and because I love dark chocolate, added 1 tablespoon dark cocoa powder. YUM! Thanks!

One Bowl Brownies

Reviewed: Jun. 21, 2008
Yummy! I had dark cocoa on hand so I used that but it was still really good. I did reduce the sugar half a cup because I don't like overly sweet things. Will use again!!

Alienated Blueberry Muffins

Reviewed: Jun. 2, 2008
They were pretty good....my blueberries fell to the bottom though and the muffins themselves were kind of spongy....not light and fluffy. But they still had a decent flavor.

Lasagna Roll Ups

Reviewed: May 24, 2008
Very good! I didn't have tofu on hand but sauteed some mushrooms up. I used homemade sauce and some garlic and basil in the cheese mixture. I think I actually like this better than regular lasagna. It is SO easy to serve as each rollup is a portion!

Dark Chocolate Cake I

Reviewed: May 14, 2008
I halved the recipe, used butter flavored Crisco in place of the butter (all I had was Smart Balance and I didnt want to use that), used a little more cocoa powder, melted dark chocolate and added that. I used a silicone bundt cake pan and I am not good with a timer so I just kept an eye on it. It came out a tiny bit dry but was very chocolatey. I may just play with this recipe a bit more. Great overall though! It was perfect for my bundt cake pan as a halved recipe. A full recipe would have been too much and would have not cooked enough in the center.

Wonderful Short Ribs

Reviewed: Mar. 13, 2008
Flavor was really good. I used some beef broth, garlic, and some red wine along with the other ingredients. Meat was tender, but a little greasy (not the fault of the recipe's author!) Next time I may refrigerate it and remove the solidified fat and then reheat. I am sure the flavors would be even better!! Meat was tender. My grandmother loved it and she normally only eats two things: corn and shrimp!

Quick and Easy Brownies

Reviewed: Mar. 4, 2008
I don't know what happened. These did not turn out for me. The proportions are all wrong. Way too much sugar in here. My husband and I shared just one, but we did not care for it. I will definitely be searching for a different one. Sorry.

Old Fashioned Coconut Cream Pie

Reviewed: Nov. 23, 2007
I made it three times. First was as the recipe states, second was with 1 c. coconut milk and 2 c. half and half. Then the third time I did it, it came out the best! I used 1 whole can coconut cream, then enough half and half to make it all up to three cups. I used three egg yolks instead of 2 eggs. I used a whole package of the frozen coconut in the pie, and then flaked, sweetened (toasted) coconut on top. I also used 1/2 c. corn starch in place of the flour. My family raved about this and it is going in my tried and true recipe book!!

Sweet Dinner Rolls

Reviewed: Nov. 23, 2007
So deliciious!! I accidentally forgot the egg but these still turned out fabulous!! I dont have a breadmaker so I put the water, milk, sugar, and yeast together and let it bloom, then combined everything else. I let it rise once, the made them into rolls/knots, then let them rise again. They were wonderful!

Jay's Signature Pizza Crust

Reviewed: Apr. 10, 2003
This was the absolute best pizza crust that I've ever made. I added fresh herbs and garlic when I added the flour, and I brushed the crust with garlic butter/olive oil mixture. I made individual pizzas for my family and my little sister's friend. Everyone ate their entire pizza! Even the ones who normally only eat one or two pieces! They are still raving about it weeks later!!
