This soup is delicious, and pretty easy to make, but VERY creamy. I even followed the suggestion of others and only used one package of light cream cheese, and was still VERY rich!! In the future I'll only use a spoonful of cream cheese! I also added a lot more cayenne (maybe a 1/2 a teaspoon), and the cayenne flavor was strong (yet delicious). I also baked the squash for maybe 45 minutes before, makes it easier to peel & cut. Will do it again, with modifications.
