Cornish Game Hens with Garlic and Rosemary

Very delicious. The chicken was so moist. The only thing I did different was a put 3 cloves of garlic in each hen. Served with baked asparagus and even my 5 year old loved it!

Roasted Rack of Lamb

This was a great recipe. My store did not have rack of lamb so I got a butterflied lamb leg I reduced the heat to 350 and cooked it for 45 mins and it was perfect. This was only because for the thicker cut of meat it needs to cook slower. Still came out delicious. I did reduce salt to only on the rub none in the breading.

Moroccan Tagine

I was pretty happy with this recipe. I agree with everyone else and you should only use cous cous. Other than that I did not have corriander so I left it out and I added 4 big cloves of garlic.

Taco Pie

The dish is ok as is. I used turkey meat and low carb tortillas to make this meal a bit more on the healthy side. I layered with meat, beans, tortilla chips, and tomatoes then put the sour cream and cheese. I also cut the amount of tortilla chips in half and it still seemed like a lot. My family liked it much better with the tortilla chips under the sourcream and cheese so as not to have that super hard crunchy top. I have also tried this with the plain yogurt instead of sour cream and it tasted just as good. This meal can be made so that your children will love it and you won't mind them eating it.

The top meringue is not enough to cover the pie and to thin once baked. The sweet factor is a bit extreme

Beef and Bean Chimichangas

I used about a half cup more taco sauce and added hot sauce to my butter that I brushed onto the tortillas. These were great and a very cheap and easy dish to make.
