Penne Pasta with Veggies

I made this with a few changes. 1. Bowtie pasta, not penne. 2. Roasted red bell peppers, not sundried tomatoes. 3. 3 tbsp of butter, not 3/4 cup 4. Juice and zest of 2 lemons added to the butter/garlic sauce. 5. Sprinkle of finishing salt with the parmesan cheese. Very fresh and spring-y.

Pan-fried Polenta with Corn, Kale and Goat Cheese

Tuscan Kale Chips

I used regular kale and they turned out pretty good. The edges were crisp, but the stalks were still chewy. I pulled off the crisp parts and threw the rest out. These can quickly get really salty, so use sparingly or avoid until they are cooked. Taste a lot like brussel sprouts.

Sweet Onion Corn Bake

5+ stars. WAY TOO MUCH BUTTER needed to cook the onions. You could easily get by with a couple tablespoons. All the butter did was pool on the top of the casserole as it was cooking.

Jersey Fresh Tomato Soup

Very good soup, but more of a vegetable flavor than tomato. I used a immersable blender to make the soup creamy and didn't need to cook it for the extra hour. It was ready within 10 minutes of adding milk.
