Quick and Easy Alfredo Sauce

this is a GREAT alfredo-type sauce. I don't put garlic powder in it. I do add a grating of fresh nutmeg though and it is wonderful. thanks for this easy recipe - I can't stand that jarred alfredo stuff!!

Una's Cheddar Beer Bread (bread machine dough cycle)

I made this totally in the bread machine. I've never used a bread machine before. I didn't read the how-to's, I just dumped everything into the machine. My bread machine has an option for a 2 pound loaf so I went with it. Well, I guess 2 1# loaves of bread aren't the same as a 2# loaf of bread :-). My dough rose over the top of the bin and started burning and smoking. I had to unplug the bread maker and pull the bin out and dump it onto a sheet pan and finish it in the oven. But ... the bread was Phenomenel!!! I added 2 diced jalpenos, dropped the cayenne to 1/2 t, didn't add marjoram or basil. I will halve the recipe next time. It was delicious!!!!

Lemon Cream Pasta with Chicken

This pasta was really good. I used rigatoni b/c I had a half box in the cupboard. I think the next time I make this I will check on the pasta sooner and take it out before it gets too done. Then I'd add the cream and reduce the sauce some - i had a lot of broth left over after the pasta was done and that might have to do with the type and amount of pasta I used. I also marinated the chicken in the spices and lemon juice for about 30-45 minutes and then grilled it instead of baking it. This gave the dish a little color, as baked chicken breasts are so white and they would have gotten lost in the white sauce. And as another review stated, I think I'd slice the chicken and top the pasta with it instead of mixing in bite-sized chunks. I think the presentation would be much more appetizing. Anniversary Chicken I

I absolultey LOVE this recipe. I don't know why it's taken me so long to review it. I've made it several times. I made a pared down version last night with 4 skinless, boneless thighs. Trying to watch calories lately so I used 1 T terriyaki baste and glaze, 1 t ranch, 3/4 oz cheddar, and 1/2 T bacon bits per thigh and it was perfect and about 380 cal *smile*.

Bada Bing Bada Banged Potatoes

I loved these potatoes - I need to make them again soon. they're fun to make and they come out crispy on the outside and creamy on the inside. I used a mixture of red and white baby new potatoes.

Artichoke Stuffed Mushrooms

I made these for my daughter's graduation party and everyone LOVED them. i had 3 people (and there were only about 12 there) ask for the recipe. I mistakenly used one small jar of artichokes instead of the 12 oz. and even though it was good, more artichokes would have been better - I'll pay more attention to the size of ingredients next time!! I did mix the parm with some breadcrumbs to sprinkle on top and they browned up nicely and gave the mushrooms a nice little crunch. I also used fresh garlic vs. garlic salt - tasted and adjusted with a little salt and pepper

Toasted Almond Party Spread

World's Best Lasagna

this was good - but I guess I just don't know how to make lasagna - or I should have made it the day before because it was very soupyl; just a big hot mess. But if you make it the day before then you should be fine. i won't be making it again, but then I'll probably just not make any lasagna again *smile*

Slow Cooker Spicy Black-Eyed Peas

These were phenominal!!! i used stock instead of water and boullion. I used 2 jalapeno's and about 5 garlic cloves and the whole ham steak. Very flavorful and spicy! This recipe even converted 3 black-eye-pea haters!! way to go MJ46NY

Boilermaker Tailgate Chili

this was good chili - it does make a ton. It is very mild though. So if you like spicy chili you'll need to add some red pepper flakes or more hot sauce. but if you don't like spicy then you should definitley try this. I won't make this recipe again and that's the reason for the 3 stars. EDIT - 11/7/11 Well I'm changing my review to a 5-star because I told my boyfriend that I'd rated this a 3-star and he told me that I needed to edit my review to a 5-star because he thinks its the best chili! who knew?!! He'd like me to add some kidney beans and some beef chunks - stew meat or chuck roast. A neighbor who had some also told me he and his friends absolutely loved it so ... there ya go! The boys think think this is a 5-star recipe. I'll just add red pepper flakes to my bowl *grin*

Thanksgiving Meatloaf

this was really good although a little dry. My daughter and her friends really enjoyed it as well. After I made it I was thinking that some turkey gravy would add the needed/missing element. I served it with green bean casserole, cranberry sauce and coleslaw. We always have coleslaw at Thanksgiving! :)

Oregon Salmon Patties

These had really good flavor with the suggestions of other reviewers of dill, garlic and old bay. I did take my onions to almost carmelized and that added a great depth of flavor. I only used 1 egg (according to some reviews that it was too eggy tasting) but definitely should have used 2 for the binding factor. I made 4 patties but should have made about 6 because the bigger patties were too big to stay together properly.

Yellow Squash Casserole

This was absolutely delicious. I used all the ingrediennts with no substitutions but I did use a different method. I layered the raw sliced squash overlaping in the bottom of the baking dish. Sprinkled with salt and pepper, carmelized onions, crushed crackers and cheese. I did this twice and then I topped with a last layer of squash, S&P, egg and milk mixture, and finally the crackerrs and cheese. Covered and baked at 350 for an hour. (actually I cooked it for 40 minutes at 350 and then 20 minutes at 375 b/c it seemed like it wasn't cooking fast enough). The squash was crisp tender and just fantastic! My dh doesn't like squash so it's all for me YAY :)

Curried Honey Mustard Chicken

This dish is fabulous!! I love curry "anything" though. I just used Kraft Honey Mustard dressing/dipping sauce and about 2 T butter. It is so flavorful and moist and yummy.

French Onion Soup Gratinee

I'm adding my vote for this delicious onion soup. The worcestershire and vinegar take this over the top. My boyfriend loved it as well! But then he likes everything I make (lucky gal that I am!!)

Mustard Pomegranate Pork Tenderloin

I really liked this pork tenderloin. I did add some rosemary to it because I like it and it goes well with mustard and orange. The only problem I had was the meat came out of the oven looking a little anemic. If I choose this marinade again then I'd definitely brown the meat first, or grill it, and then fiish it in the oven.

Sally's Spinach Mashed Potatoes

I really liked this. Some people said it tasted too much like spinach; I didn't think so but I like spinach. I added a lot more dill than th recipe calls for - I just kept adding and tasting till I liked the taste. I made it the day before and then took it out of the fridge about 1/2 hour before cooking it. Topped with the cheese and baked for about 1/2 hour ... maybe a little longer. Even though I liked it I doubt I'd make it again.

Sweet Onion Pie

The filling in this is fantastic, but I really didn't like the cracker crust. I even pre-baked it like some other reveiwers did and it was still kinda mushy. i think it would be great in a pie crust and I might try that. I used swiss cheese instead of cheddar just because I think swiss goes better with onions than cheddar does.
