Zucchini Brownies

Spectacular brownies! I'll be making these again and again! As indicated by other reviewers, this does look a little funny going into the pan, but don't let that fool you. These brownies are so rich and chocolatey, you don't even need the frosting!

Tanya's Louisiana Southern Fried Chicken

I followed the recipe as written and found the chicken to be way underseasoned. If I try this again I will be doubling the amount of seasoning or maybe adding it to the flour instead of the liquids so that more of it adheres to the chicken. The chicken was really moist and juicy, it just lacked a lot of flavor.

Chuck's Favorite Mac and Cheese

I will definitely be making this one again! It was by far the best mac and cheese I've ever had. The cottage cheese sounded weird to me, but it helps make this so rich and creamy. I did cut back on the bread crumbs as suggested by others, and I'm glad I did. I doubled the recipe but only used about a half cup of bread crumbs and it was plenty.

Pumpkin Bread IV

Buttery Rolls

These were amazing! A huge hit at my Thanksgiving potluck. I live at about 5000 feet, so I had to add about 1/8th cup flour, but these turned out great! I will definitely be making these again!

Vanilla Pumpkin Pie

I made two different pumpkin pies for Thanksgiving this year and this one was by far the favorite. I doubled up on the vanilla as suggested by others. I had to bake an extra ten minutes, but that might be my oven. I was really glad to see this turn out so well - when you're baking at higher altitudes it's always hard to know what you're going to get, but this recipe worked great!

Pumpkin, Sweet Potato, and Leek Soup

I made this for a Thanksgiving dinner. It was enjoyed by some, but others had difficulty with the texture and unusual flavors. Not bad, but probably not one I'll try again.

Chicken Massaman Curry

Outstanding! Just as good as what you'd find in a restaurant. I used sweet potatoes instead of white ones and added chunks of bell pepper to add some color. Also, swapped Worcestershire sauce for the tamarind paste as my grocery store didn't carry it. One of my new favorite recipes!

Mexican Cornbread II

I added a teaspoon of sugar as recommended, cut down the cheese slightly, and used chipotle peppers in place of chiles (that's what I had on hand). It turned out fantastic! Great blend of sweet and firey!

Almond-Crusted Halibut Crystal Symphony

The sauce was fantastic (although time consuming), but the recipe did not call for enough of it to drown out the taste of the fish. The sauce was far too light for a heavy, fatty fish such as halibut. If you plan to use this recipe try a lighter white fish and skip the almond coating, it doesn't blend well with the sauce.

I've made this several times now. Personally, I love the flavor, but it is a little on the spicier side for most of my friends. The bake time needs to be about 10-15 minutes longer than indicated here or it won't set up properly.
