Pumpkin Cheesecake in a Gingersnap Crust

I received several requests for making this a part of our family Thanksgiving every year! All spices & vanilla were doubled plus an addition of 1/8 tsp ground cloves and 1/8 tsp nutmeg. With these modifications the recipe is perfectly flavored and deserves a 5 star rating. As written, it is a little bland.

Simple White Cake

This is a 5 star recipe with the modifications given by many reviewers (4 star as is). It's really hard to find a good vanilla cake recipe and this is the best I've found after trying several. Yummy and light! Not a true white cake though. Use 1 T of vanilla extract (I used vanilla bean paste for appearance) 3/4 cup of buttermilk Cream butter and sugar for 10 minutes.

Lemon Cupcake with Blackberry Buttercream

These were quite good but not as lemony as I would have liked. On the second go-round, I added lemon extract 1.5 tsp and just 1 tsp vanilla extract plus a little extra lemon zest (from 3 small lemons). I did this with the raspberry jam/berries for the icing as this is what I had on hand. The result was like a little cake version of raspberry lemonade. Very light and refreshing. The cupcake is not that sweet, but the icing complements it perfectly. The cupcake recipe makes 12 regular cupcakes and needed about 3/4 of the icing recipe for the perfect amount of decoration & flavor.

Lemon Pasta Sauce

Rating is based on vegan version inspired by this recipe. Very unique and delicious. 1 stick margarine 2 cups plain unsweet almond milk 2 cubes veg bouillon zest from 1 lime & 1 lemon juice from 1 lemon 1 tsp crushed garlic 1/2 cup nut. yeast 1 bunch basil chopped lemon pepper to taste

Russian Vegetable Pie

My son really liked this, but my husband couldn't get past the looks of it. What a role reversal! I thought it was ok (edible, but not great), but high calorie for what it was. Next time, I'll just have mac and cheese with veggies on the side for about the same calories!

Low Carb Cauliflower Leek Soup

Kung Pao Chicken

The sauce had a great flavor. I love spicy food, but I thought the chili paste amount was too much. Possibly it was the brand I used (Sambal Oelek Ground Fresh Chili Paste). I made a vegetarian version with tofu, mushrooms, broccoli, water chestnuts, & green onions.

Classic Cinnamon Rolls

Very good. Probably not amazing enough to warrant the time it took to complete all of the steps in the recipe. I like to cook, so it was fun to put in the effort, but I must admit that a quality store bought roll is not that different. Trader Joe's "Jumbo Cinnamon Roles" are very similar, cheap, quick, and also non-hydrogenated. For this recipe, I definitely needed to double the icing, I used a brown sugar/cinnamon/chopped pecan filling, and I added raisins to some and not to others. Both versions were tasty.

Boilermaker Tailgate Chili

My son made this for a scout dinner. It was a hit! We pre-mixed the spices and sauces so that he could just add the canned goods, meat, and fresh veggies. Makes a ton.
