Pumpkin Muffins II

This seems like a very versatile recipe! After reading some of the reviews I subbed in a cup of oats for a cup of flour and only used 1 1/2 cups sugar. I didn't have any cloves or allspice on hand so I just excluded those and used canned pumpkin instead of fresh. Even after all those changes they came out WONDERFULLY. Next time I think I'll sprinkle the tops with a bit of raw sugar before baking for a nice looking top. I also think nuts or raisins would be perfect in these.

Raspberry Icebox Cake

I've had this in my recipe box for a while, and I was skeptical but curious. I've made these twice now this week and both my mother and husband cannot get enough! I followed the advice of another reviewer and used chocolate graham crackers instead of regular ones and also omitted the brown sugar. I used two muffin tins to make single servings. The first time, I had some problems with the graham cracker base crumbling away instead of sticking together. The second time, I doubled the raspberries and graham crackers and skipped baking the crust. I spooned on a layer of gelatin-soaked raspberries with a slotted spoon, then microwaved the jello left in the bowl. Pouring the hot liquid jello on top made the gelatin soak into the graham cracker crumbs making them stick together beautifully! The graham crackers became like a dense moist cake. I finished with a big dollop of topping and a fresh raspberry for each. Surprisingly delicious and super easy to make! This will now be my go-to for an easy way to impress people.

Love these biscuits. They're perfect for biscuits and gravy mornings and they get so big! Remember, it's important to mix/knead them as little as possible otherwise they won't get fluffy.

Meatball Nirvana

My go to recipe for meatballs. The only difference is I add a bit of black pepper and whichever hot sauce I have on hand (usually tabasco or sriracha) Also instead of garlic salt I use garlic powder since salt is already called for. We always have a big bag of these in the freezer for easy dinners or packed lunches. Just microwave a handful for a few minutes and they're good to go! Thanks for the awesome recipe!

Cauliflower Gratin

Made this according to directions and I thought it was delicious. The swiss and bacon go really well together! Next time I think I'll try precooking the cauliflower a little and throwing crumbled crackers on top. Thanks for the tasty recipe!

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

Hands down the greatest fish tacos I've ever had. After reading the glowing reviews I was skeptical but decided to give it a go. I followed the recipe exactly and remained skeptical as I prepped and tasted the coleslaw and lime/honey mixture. After the tacos were assembled and I had my first bite I was a believer! These were truly delicious and will now be a part of our normal meal rotation. Thanks for the awesome recipe!!
