Easy Meatloaf

Just made this recipe for April 1st (April Fools Supper) into "cupcakes". I followed another reviewers advice and used Italian Seasoned Bread Crumbs. It was very tasty. After combining all the "loaf" ingredients I divided the meat mixture into large balls and put them into a muffin pan, then spooned the glaze over each serving. I still baked for one hour and they were done perfectly. When serving the "cupcakes" I bought premade mashed potatoes (easy) and tinted it bright pink. The mashed potato "frosting" then went on the meatloaf "cupcakes". I served each on a plate with a lit candle that we all blew out after saying our dinner prayer. It was a fun and tasty meal. My 6 year old niece told me I really "April Fooled" her as she thought we were having real cupcakes for supper.

Pineapple Upside-Down Cake VII

I made this the night before in a 9x13 pan. I followed the recipe exactly and made sure to flip it upside down into another 9x13 pan after 10 minutes. It did not stick to the pan and was the "right" side up when I brought it to the party. It was super good when microwaved 15 seconds and served with cool whip or vanilla ice cream. If I make it again and don't care about the presentation I think I will make it with pineapple tidbits so it is easier to cut smaller pieces.

Sassy Tailgate Sandwiches

I really liked this and will be making it again. I used Black Forest Ham and Swiss Cheese. It was delicious. I halved the recipe and made some plain ham and cheddar cheese sandwiches for the kids. Put a little butter on top of them and baked in the same pan.

German Sausage Chowder

I really liked this recipe. It completely filled my stock pot so next time I think I will tr y cooking/steaming the cabbage first. I followed another reviewers advice and made a roux in a separate pan by melting 3 Tbsp butter and adding 3 Tbsp flour. Slowly added in the evaporated milk. Then I added 2 packages of shredded swiss cheese. It melted into a smooth fondue like cheese sauce that I incorporated into the soup and so there were no issues about cheese goo.

Triple Berry Crisp

I really love this recipe. I have made it twice and am craving it again. I have used frozen berries. Rinsed and thawed. I usually melt the butter in the pan while it is preheating per others review.

Fluffy Pancakes

Very Fluffy, A little bit hard to judge when cooked properly as mine didn't really bubble because they were so thick. I did learn to spread the batter out when I dropped it on the griddle.

Melt - In - Your - Mouth Shortbread

Easy to make. Great with different flavored icings. Tried Vanilla and peppermint. Suggestions include Butter Rum, Amaretto and almond. Will want to make again, and again.

Jennie's Heavenly Slow Cooker Chicken

Very Good. Served over angel hair pasta. I used lower sodium cream of mushroom soup and lower sodium chicken broth. Served with fresh asparagus pan fried and was very happy. I will want to make it again. I doubled the recipe so we could eat the leftovers. Next day sauce was thicker and I liked it even better reheated in the microwave.

Pizza Casserole

I liked this recipe. I doubled the recipe and added ground pork. I used Turkey Pepperoni to cut down on the fat since I added the pork. I followed anothers review and put a layer of cheese between two layers of the sauce/noodles along with the mozzarella on top. I shared one of the casseroles with family. I think this would be a good potluck dish.

Alyson's Broccoli Salad

I have made this a number of times using the red grapes. I have used fresh broccoli and frozen broccoli (cheaper in the winter). It is a good recipe to have stand by for potlucks, etc.

Black Bean Salad

I have made this salad a number of times. I love the leftovers. I usually wait and add the avocado to the portion I am serving. It is huge so I half the recipe and have used canned jalapeno peppers and red, orange or yellow peppers according to whats on sale.

Molasses Sugar Cookies

I really like these cookies. They are chewy and look really fun with colored sugar. I made them with butter flavored crisco (all I had) and enjoyed the slightly buttery flavor. I also used half sugar/brown sugar. Will put it in my box of Christmas goody recipes.

Baked Potato Soup I

I made this soup for a party this weekend and it was delicious. I used 5 cups whole milk and 2 cups low sodium chicken stock per other reviews. I actually cooked the bacon, baked the potatoes and chopped the onions one night. Then the next night prepared the soup per instructions and put it in the crock pot to cook the following day. Cooked it on low for 4 hours and it was perfect.

BLT Salad

White Almond Wedding Cake

The cake was OK. I layered it in a birthday cake for a guy who loves almond but I found it a little too strong a flavoring. Actually made it hard to taste a chocolate cake layer. If I make it again I will cut the vanilla by at least half.
