I usually make half (6 servings, 3 lbs of meat). I find it's not spicy enough, so I usually double the hot sauce, add maybe half a tablespoon of cayenne pepper, and throw in 4 habanero chiles (those measurements are for the half recipe). I also push the chili to the side and brown a couple tablespoons of flour on the bottom of the pot. That thickens it up a bit more. Toward the middle of the simmer, I add a bit of heavy whipping cream (or milk or half-and-half). I love this recipe!
