Onion Gravy for British Bangers and Mash

The flavor was great and everyone loved the gravy with our Irish bangers and mash. I added nearly four times the flour though to thicken it enough. My only real problem was that the red wine turned the gravy pink. Next time I will either modify this one to use red onions and beef stock (calling it red onion gravy and deepening the color would be less of a turn off then having straight-up pink gravy) or just use Williams Sonoma recipe for Banger and Mash with red onion gravy.

Blueberry Cream Muffins

Good muffins- my main bluberry muffin recipe now. I add 1/4 teaspoon of baking powder as recommended by others. For a healthier muffin, cut eggs down to 3 instead of 4, (or use Egg Beaters), use 3/4 cup of oil (or substitute half or more of the oil with applesauce), use half whole wheat flour and reduced fat sour cream.

Creamy Hot Chocolate

Great hot chocolate, but like other reviewers noted, use whole milk rather than water. For Mexican hot chocolate, add a tablespoon of cinnamon and 2 tablespoons of instant coffee. Gets very sludgy at the bottom so keep it stirred really well.

Spinach and Artichoke Dip

Absolutely delicious and very easy to prepare. What a new experience- eating great artichoke spinach dip without paying a fortune for it in a restaurant. Recipe calls for a bit more jack cheese than I prefer, will cut down to about 2 cups next time.

Triple the Ginger Cookies

Absolutely delicious. I didn't think they were a pain in the butt to make, with a food processor to chop both the crystallized and the fresh ginger, and a welcome break for a busy mom between the making and baking. I will make these again and again and again...

Cheesy Potato and Corn Chowder

I loved this chowder! It was creamy and delicious- a real comfort food. I sauteed the onion in olive oil rather than margerine, left out the celery (personal taste), used 4 cups of cubed baby red potatoes, added an extra can of (cream-styled) corn, added a bit of corn starch to the milk to make it extra thick, and used shredded Mexican cheese blend rather than " processed cheese food." It was gone in no time.

Classic Bran Muffins

Delicious! I used applesauce instead of oil and raisin bran cereal. They were so moist! I have been using the whole egg but will probably use egg whites or Egg Beaters next time. I may experiment with soy milk too instead of buttermilk. But as is, these are the best! Thanks for sharing.

Chocolate Banana Bread

This is an awesome treat! I made it with mini chocolate chips and since I had no butter on hand I used shortening with a few tablespoons of water. The recipe made 1 regular loaf, 9 mini loaves, and 24 mini muffins. It was very moist and fluffy. The family loved it. Next time I will experiment with lowering the fat in the recipe (egg whites, half margarine/half applesauce, etc.). I highly recommend mini chocolate chips because they don't over-power it like the regular sized chips do.

Caramelized Oatmeal Raisin Muffins

Good flavor, slightly chewy, loaded with raisins. I doubled the amount of wheat germ and used skim milk in place of evaporated. Family loved them! Will definitely make again.

Chili I

This is now my favorite chili recipe. The whole family loved it, served with hot corn bread. I don't know why anyone would say they could taste the beer and coffee, unless they didn't follow the recipe. I made it in the crock pot, with all ground beef. Next time I think I will try it with chicken. Delicious!

Buttermilk Biscuits I

I've searched for a long time for a buttermilk biscuit recipe that makes a biscuit that was fluffy and full of flavor. THIS IS IT! For those having trouble, I suggest kneading very lightly, as too much kneading makes them tough. Also, I knead and roll them out in all-purpose flour because the extra self-rising flour seems to give them an acidic taste. Good biscuits require practice and close attention to detail, but are far worth it, especially in comparison to the ones that plop out of a round tube.

Award Winning Soft Chocolate Chip Cookies

These are awesome! Definitely the best chocolate chip cookies I've ever had. I've been making them for over a year, and I have never made them with out sharing with eager co-workers, family and friends. They are a huge hit!
