Hot Chocolate

I made this with changes. I give it 5 stars the way I made it. I used the stovetop. I tempered the egg with the hot liquid. I deleted the cinnamon and added extra chocolate chips and a 1/2 tsp of vanilla. It thickened a bit as it cooled. It was so creamy and good. I also briefly blended it in a high powered blender and that gave it extra smoothness.

Wacky Cake IV

Made this yesterday to take with a meal I had made for another family. I had no eggs left so this was perfect. I made it in two 9 inch (?) round pans so I could keep one for us and give one away. It baked around 23 minutes and probably could have baked a few more minutes, but it was super-moist, which was great. I cannot imagine a 9 x 13 being done in 20 minutes like the directions say. It really is as easier than a cake mix (which I try to avoid) since you just measure and stir. No mixer needed. My husband asked what kind of chocolate I used since it was very chocolately. Just cocoa! The frosting is a really good one. I had doubts about putting it on the warm cake but it held up wonderfully. I ended using around 3 cups of powdered sugar. I will definitely make this again. I used to write menus for senior centers where lunch was served. I put wacky cake on the menu and it was always well liked. It was rarely served with frosting since it's such a moist cake. But...I like frosting!!

Mom's Zucchini Bread

Very good zucchini bread recipe. Mine was underdone even though I checked it with a toothpick, but I don't fault the recipe for that goof. And I'd rather have a quick bread a little undercooked rather than dry and brown. Everyone in the family enjoyed it. I followed the recipe (halved to make one loaf) except for adding a bit extra zucchini and using cane sugar. Will make again and probably cut back on sugar a bit.

Butterscotch Fruit Salad

I used sugar free pudding to reduce the calories. It wasn't my favorite salad but my company really liked it. We used pecans instead of peanuts because that's how I originally had the recipe. I really really liked the pecans and would not want peanuts. We thought it would be awesome with some cream cheese in it, some toffee bits and some caramel drizzles in top. But that wouldn't be too healthy, would it?

Country Green Beans

These are so so so good. I had some Honey Baked Ham pieces in the freezer that gave so much flavor. The second time I made them I didn't add any butter. Still good.

Chocolate Peanut Butter Wacky Cake

I have to say I am reviewing it without trying the frosting. Made a half batch if the cake in an 8 x 8 pan and baked for 25 minutes. It was really good and moist, like the Wacky cakes I've tried in the past. I love frosting but I really don't think this cake needs it. Mine was a little taller than I would prefer. Also gotta add - this is cheap to make!

Ham Breakfast Braid

Made this Christmas morning at my parents' house. It was so easy and delicious. Everyone liked it. I undercooked the eggs a bit so they would still be moist after baking. I did find it cooked way quicker in the oven than the suggested baking time. Keep an eye on it. It would have been way too done. If I have to make something for a brunch or morning baby shower again it will be this!

Henry and Maudie's Oatmeal Cookies

I have a grain mill that makes fresh whole wheat flour so I've made many a whole grain items. This wasn't my favorite. It was dry, and the first batch fell apart. The other batches seemed to stay together better after sitting a while as dough. I added chocolate chips when I figured out how bland this cookie was going to be. Still, they are a healthier choice as far as cookies go and my husband and 4 year old seemed to like them just fine.

Lentil Soup

I really liked this lentil soup. I pretty much stuck to the recipe except I didn't have any wine and I used water and chicken base instead of broth. Lentils don't really need to soak so this recipe was pretty quick for me. I think I added more liquid than called for since it seemed thick at the end. I froze it in individual portions for quick and healthy lunches. Very good!

Millet Muffins

I ground my own wheat for these. They turned out wonderfully well - not dense like many whole wheat recipes. I also added chocolate chips to a few as an experiment. It wasn't so great. But what was great was adding a teaspoon of apricot or blackberry jam to the middle of the muffins before baking. They were yummy! I will definitely use this recipe again. It's healthy and delicious and is very versatile.

Delicious! I made these for the nursing home residents where I work. The residents loved them, and so did the staff. It's an easy recipe and so moist. A nice fall dessert.

Five Cup Salad

My husband used to have this recipe when he lived in the dorm in college. It's now one of his favorite salads to have at home. We use light sour cream instead of regular. I'm now adding it to the menu of the nursing home where I work. It's so easy to fix.

Luau Chicken

We fixed this recipe for our Luau theme meal at a nursing home. We used boneless, skinless chicken breast instead of whole pieces, and left out the water chesnuts. We got so many compliments! Quite a hit!
