Spanakopita (Greek Spinach Pie)

use baby spinach, 1.5 bags. double the garlic and feta.add dill and black pepper use egg beaters and lowfat ricotta. use 8 sheets phyllo on top and bottom. great to freeze

Wild Rice Casserole

love it. left out the mushrooms. doubled the rice and I think I could add a third box, minus the seasoning pkg. left out the chicken, and doubled the sausage.

Black Magic Cake

Made this as written, it was a very thin batter, and I greased the pans and lined them with parchment paper. It came out a two very nice layers. Very chocolaty and moist. Was a huge hit.

Chocolate Chip Banana Muffins

loved these. I used butter instead of oil, and add a bit extra yogurt(vanilla) because the batter looked too dry. Only used 1/2 cup sugar. Will make again today!

Oatmeal Peanut Butter Cookies III

yummy! Really good cookie, was good plain, not too sweet.But we liked them best with the filling. I doubled the cookie recipe, but not the filling, and had plenty to fill most of the double cookie batch. Will make again, and soon!

Slow-Cooker Chicken Tortilla Soup

So yummy! I added 3 skinless bone-in chicken breasts and shredded after about 3 hours. I used a 25 oz can of diced tomatoes, and 1 14 oz + 1cup of chicken broth instead of the water. I also added blackbeans, halved the chili powder, and added extra garlic and cilantro. My kids loved it too. Definitely serve with tortilla chips, sour cream and cheddar cheese.
