Peanut Butter Bars I

I made these and it's way more than one household with 3 kids needs to be consuming. I ended up cutting them up and giving a baggie full to 2 separate next door neighbors. The first guy took one out of the baggie and ate it and wanted to steal the other baggie. Guess that means they went over well. LOL

Easy Pineapple Cake

really good.. I was skeptical about using the frosting but it was good.. I just used my own cream cheese frosting recipe though and made it a little less thick and sweet than I usually would. Cake needs a little cinnamon I think but definitely a keeper.

J.P.'s Big Daddy Biscuits

I cheated by using self rising four and I had a partial stick of butter flavored crisco so I used that and added shortening to make up the difference. They were very good. They didn't brown much but its probably because i didnt follow directions.

Delicious Raspberry Oatmeal Cookie Bars

These were ok. Next time I'll try and add something to the crust b/c it was a little bland for my taste. I might go a little heavier on the jam than I did. I was a little short so I think I ended up only putting about 2/3 of a cup in it and I"ll spread it a little closer to the edge. I was worried about it leaking out and burning based on some of he reviews so I left about a 1/4 around the edges which didn't seem to be necessary. The only reason I didn't rate 5 stars is b/c of the crust being bland (not b/c I used less jam :) ) which would be my fault.

Slow Cooker Spicy Black-Eyed Peas

I left out the spicy stuff and just used neck bones instead of ham.. added 5 slices of bacon and left everything else the same and everyone loved these. I'm not a fan of black eyed peas so I'll have to take their word for it.

Grandma's Lemon Meringue Pie

I had no idea how easy it was to make a homemade lemon meringue pie or i would have done it much sooner. It got rave reviews and my husband asked for a chocolate custard pie with this meringue on top.

Key Lime Cake II

Really really good. Very light.. I did work with what I had though and used lemon juice and vanilla pudding.. even put in extra juice and I think next time I might use some extract too b/c the flavor in the cake was really light. Added vanilla extract to cake and to the icing as well as a couple of tblspns of butter to the icing. Put 1/2 on the cake warm as suggested by others and put the rest on after it cooled but my husband had already cut into it by then and was raving about how good it was.

Best Marinara Sauce Yet

Great stuff. I used diced tomatoes b/c that is what I had. I used 1 can and then 2 cans of sauce and 1 can tomato paste. Eyeballed the other ingredients. Used water with chicken bouillon b/c I'm not a fan of wine. Added about a tblspn of brown sugar also and omitted the oil except what I sauteed the onion in.. don't think it needs it.

Limeade Pie

Make sure you don't make the mistake I did and put the whole can of concentrate in if you can't find a 6 oz container. I got the 12 oz and just assumed it was the right size. Boy was it waaaaay too tart. I redid it and then did a lemon one and both are outstanding!

Chocolate Chip Banana Muffins

The kids love, love, love these. I found my 2 year old standing on a stool with the lid to the cake plate (luckily it's plastic!) open and he had taken a bite out of every single muffin that was left. That then set off a tantrum from the 14 year old when she came home from camp that afternoon and realized there were none left. I'm now making more.
