Strawberry Vinaigrette

I did take some other reviewers advise and cut back on the olive oil and added a few extra tweaks for my taste. I used 2/3 cup oil and 1/3 cup of the vinegar. I had a strawberry vinegar on hand so I used half it and half balsamic. My strawberries were very sweet naturally so I added the 1 TBSP honey and no extra sugar. Left out the tarragon and added 1 tsp poppy seeds. Very Good!

Alyson's Broccoli Salad

This is a great salad! One change I make is to use a flavored vinegar. I have an apple lime vinegar that is fabulous mixed with the mayo and sugar and gives it a nice sweet/tangy taste. I also like to use red or black grapes cut in half instead of the raisins. I also blanch the broccoli; Literally dump in boiling water, stir 10 sec, drain, rinse in cold water and pat dry. This gives the broccoli and very bright green color and just a slightly more tender bite.

Oatmeal Pancakes II

These turned out wonderful making a few changes for my gluten free family. I used gluten free old fashion oatmeal that I blended slightly in the food processor. A few other changes made were: substitued gluten free flour mixture for regular flour. I used 2 egg whites for 1 whole egg and used another's suggestion of adding finely chopped pecans. My batter was very thick so I added a little extra buttermilk as well. Yummm! We served these with fresh berries but I think fried apples with them would be perfect as well!

Green Bean and Bacon Saute

This was a good basic recipe. I blanched my fresh beans for 3 min, cooked the bacon and the chopped onion (like other reviewers suggested) ahead of time. The bacon cut into 1/2 inch pieces fries up more quickly and is perfect for a crumbled consistensy with the beans. Threw everything together with the garlic for final saute just before meal time. I also added about 1/4 cup of good balsalmic vinegar at the end of the saute which made this side even better! 4 stars for basic recipe and 5 stars with the added onion and balsalmic vinegar...Yummm I will serve this again!
