Slow Cooker Buffalo Chicken Sandwiches

Really good! I modified a little for the amount of food I needed. I still used only one bottle of sauce. I put eight frozen breasts into the pot along with 2/3 bottle of sauce, garlic, and onion. I then added 2 cups of chicken broth so that all the chicken was covered. Cooked this on low for 7 hours adding the ranch packet with 2 hours left. We also served ours on toasted buns with blue cheese dressing. So simple and so good! Keeper for sure!

Ham and Fresh Basil Pinwheels

good for what it is - easy finger food. I added some green onion and a little garlic powder and pepper. The basil was a great diversion from the normal roll-up recipes.

Easiest Peanut Butter Fudge

Honestly as I made this I was thinking two stars. I had the same problem as others with the crumble factor. The recipe states to beat until smooth...after reducing the brown sugar and powdered sugar adding more peanut butter and a touch more milk it was still just crubmbles. I ended up pressing everything into the pan and fridging it for 4 hours and OH MY! SOOOOO good! So don't panic if you see crumbles. It is worth it!

Banana Banana Bread

I'm not a fan of banana bread but finished off this loaf in a day and a half. Really moist and heavy so no glass of milk required! I also added chocolate chips as some had suggested. Really yummy thank you!

Easy Chicken Enchiladas

Very creamy versatile base dish to customize. I followed another's suggestion and cooked the chicken in a crockpot with onion garlic, and chicken stock on high for about 2 hours. I think this helped add more flavor to the whole dish. We also love garlic in our TexMex food so I added three tabelspoons to give it a bit of a spicy kick and also added three tablespoons of hot sauce. I also made the filling a day before and allowed the flavors to combine. We also had a lot of left over filling to smothered the top of the enchiladas before baking. Served with fresh pico, hot sauce, and guacamole and it was fantatic. Sounds like a lot of work but we got two dinners (with a biiig guys eating too), and three leftover lunches out of it. We thought it was even better heated the next day!

Mongolian Beef and Spring Onions

WOW. First go took a while to make but MORE than worth the effort. We added chili flakes (as some had recommended) but it still wasn't hot enugh for us so we also added about 4 tablespoons chili oil. Thank you for an amazing recipe!

Salsa Chicken Rice Casserole

It was decent but seemed like a lot of time for the outcome. I added about a half a packet of taco seasoning to the wet ingredients and glad I did or else the flavor would have been bland. We topped with salsa and sour cream. May make this again, but for an hour an d20 minutes I can think of better tasting recipes.

Hawaiian-Style Meatballs

AMAZINGLY suprised! I am not a meatball fan and when I saw another foe - apricot jam - I tried to run. But the other half teased me so much I made them to prove a point - his point as it turns out :) These are fantastic, hot/cold, reheated, for lunch, dinner, bedtime snack. Served on ramen stir fried with veggies. SO GOOD. I did use an apritcot and pineapple jam instead of the straight apricot. Thanks for the yummies!

Spinach and Orzo Salad

This is pretty tasty and the slight spicy flavor is a nice touch. It seemed like some forward flavor was missing though. Everything seemed like an after-taste (and it was really good) but still needed something up front. Maybe a citrus? more vinegar? will play a little.

Realllly goood. Halved the recipe and worked fine. I also flipped the pan over straight out of the oven as another recommended and yes, it makes the yummy sugar goo run alll over the rolls (that's a good thing) :)

Scrumptious Frosted Fudgy Brownies

I've tried this recipe twice and both times the 35 minute bake time turned into almost an hour as only the edges seemed to cook. The center was a runny mess. Once the brownies had baked for an hour and sat overnight and I removed the hard "crust" that had formed on the top, they were really good! If I could figure out why they aren't baking correctly I'd give a five. Aslo, you can never have too much chocolate. Anyone who says they are a chocolate lover and says these are too rich should consider not saying they are a chocolate lover. I'd consider making these again and again just to have that heavy rich middle section even with the extra bake time and hard crust!

Mocha Cake I

I followed directions to the spot and followed other's direction of reducing the oil. The texture was fabulous (soft, not too oily, spongey) but the taste was not high on my list of ever want to taste again. I will keep the recipe to manioulate for other cake flavors but I won't be making the "mocha" part ever again.

Luscious Buttercream Frosting

ooober good! I used clear almond flavoring to keep the frosting as white as possible and because I used it on a red velvet cake (chocolate and almond... YUM!). Super easy to make. I tried to make a half batch the second time and it didn't seem to stiffen right so make a whole batch and use the rest for um well, snacking:)

Newport Clam Chowder

YES! Very tasty! I made this for my flatmates when I was inn Australia because they don't have New England Clam Chowder (poor souls!). EVERYONE loved it! 2010 update: friends and fam still loving this one! Comes out great each time.

Lavender Cookies

These were okay. I doubled the lavender in the cookies and thought that was just right. The cookies themselves were very dry. I would try adding lavender to a sugar cookie based. I just don't care for dry biscuits.
