Potato and Bacon Salad

I made a double batch of this the day before serving. At others' suggestions I mixed the bacon into the salad instead of sprinkling on top. Problem was, the bacon all but disappeared! If I were to make it again i'd leave the bacon out altogether because who needs the extra calories of an entire pound of bacon in their potato salad whene you don't even taste it? Maybe sprinkling the bacon on top would have helped bring the taste to the forefront? Otherwise it was good.

Creamy Chicken Casserole

The end result of this easy recipe was really good! My (goofy) husband left the chix flavoring out of the rice and I didn't realize it until the casserole was completely made and in the oven for about 5 minutes.... I took it out, took off most of the chow mein noodles, sprinkled the chix flavor packets into the casserole, mixed it all up good and replaced the noodles. No harm, no foul... this was still a tasty meal and we'll definitely make it again! EDIT: I am bringing this from 5 stars to 3. Although this meal was tasty the first night, the leftovers were gross. We're only 3 people so we had almost half the total dish left .... the originally browned and crunchy chow mein noodles were all soggy and nasty the second time around ... we forced ourselves to eat this the second night and the rest remaining went into the trash. I'd suggest making this for a large bunch of people and not counting on leftovers ... good for a large family, tho!

Seven Layer Dip

I made this as written except I sub'd lemon juice for lime juice. This was a really great 7-layer... I've made diff. 7 layer recipes before but for some reason this was the best. I took this out of the fridge about 3 hours before serving and I was very pleased with the room-temp textures and flavors.

Quinoa Pudding

I made this pretty much as written, but first soaking the quinoa. I also decreased the lemon to just 1 tbs and I added a small handful of chopped walnuts. I was underwhelmed with the result ... I kept thinking it needed SOMETHING ... brown sugar sprinkled on top? Syrup? Cream? Maybe more raisins to raise the sweetness level? Maybe I should have used some sweet milk-type liquid instead of the apple juice, like vanilla Almond milk? I'm not really sure, but I'm going to keep looking for a quinoa breakfast recipe I like, or i'll try this again with different additions...

Coconut Poke Cake

I made this as written with a box cake but my cake fell apart when I poked it (my fault, I used the back of a wooden spoon... figured big holes would be better but I was wrong!) so I had to make a homemade white cake instead. I then followed the recipe to a "T." I personally found it to be way too sweet, but my husband loved it. I guess I was hoping for a more of an Italian Cream Cake (just because thats what the picture kind of looked like)which this definitely was not. 4 stars b/c I really felt this cake was just way too sweek...

Slow-Cooked Country Ribs in Gravy

Pretty good ... my husband put it together and put it in the crockpot ... it wasn't done after 4 hours on high and I ended up putting the crock in a 350 oven for 1.25 hours. There was a lot of tasty juice/gravy which we put over rice. I used country ribs which my husband "forgot" to trim so the gravy was a bit fattier than I wanted, but it was still very tasty. A good/easy weekday dinner.

King Ranch Chicken Casserole I

This dish was really easy to make and super-yummy! I got corn tortilla rounds and used about 2/3 of the bag ... using the whole bag would have been excessive, I think. I also didn't layer the rest of the ingredients, rather mixed it all up (with just half the cheese) and poured the mixture on top of the tortillas and then sprinkled the top with the rest of the cheese. I also crumbled some crushed tortillas on top (which really made no difference to the end result). I put it in the oven at 300 as suggested but after about 15 mins I saw it wasn't doing much and I increased the oven to 350. It definitely cooked more than 20 mins, probably around 40 (I didn't keep track). The dish was really really good ... the ONLY change I will make next time is to add a small can of mild green chilis since my husband seemed to think it needed a bit more flavor/spice... for little kids tho, this would be perfect as written.

Apricot Lentil Soup

This is a recipe which strangely pulled together in the end. I started off with a bit more broth than called for. My lentils didn't seem to be getting soft and I was losing all my liquid, so I added another can... and another can ... and still they didn't get as soft as I would have liked. I doubled the cumin which, had I not added the extra two cans, I would have definitely regretted, but since I DID add the extra broth the extra cumin was fine. I used a can of petite diced tomatoes since that is what I had on hand. At first I emulsified about 3/4 of the soup but the lentils that weren't emulsified were NOT soft enough so I did the rest. It tasted okay, but not great, and then I remembered the lemon juice. THATs where things got strange. The addition of the lemon juice completely turned my "okay" soup into a "really really good" soup. Go figure. I'll make it again, probably, but never for guests (b/c the end result looked kind of like dog food). BTW, the apricots all but disappeared... I never tasted one. Oh, and it fed 2 adults and one child with only a small bowl left, so if you're feeding more than that double the recipe!

Real Hummus

Using the original subitters changes (2 cloves garlic, 3 Tbs Tahini, 1/2 tsp salt and cumin instead of pepper) this was the BEST hummus I'd ever had! Try it... you'll never look for another recipe for Hummus again!

French Toast Casserole

This was pretty good. I used "French Toast" bread that I get at the supermarket, which has a maple taste already. I then used some egg nog instead of milk as some reviewers suggested and found that between that and the already-flavored bread it was TOO MUCH. Still, it was a fun Christmas morning dish ....but I think I prefer regular french toast.

Donna's Cheesy Quiche

I hate when people make changes to the original recipe and then rate it badly. I made a lot of changes to this recipe, but i'm rating it "The Best." It was a good starting point; I added a few more eggs, partly because my eggs seemed SO small and partly because there just didn't seem to be enough eggs. I threw some cheese in with the egg mixture and then some on top as in the recipe. And I used fresh basil and then a bunch of other spices (i.e. dry mustard, dill, cumin...) but not oregano because I didn't want an Italian tasting dish. The end result was DELICIOUS and I will DEFINITELY be making this again! Thanks Donna for a good starting point!!!

Cream Cheese Kolacky

These really were awesome. I tried different approaches ... I rolled them out really thin, and they were too flaky...when I rolled them thicker they tasted better. Then with just the last two I made thumprint cookes and that was the best of them all ... I'm sorry I didn't try that at first! The dough in this recipe is yummy ... very plain but thats because you're supposed to use powdered sugar. I could see making these using different cut outs and frosting them, too. A really good base for a lot of ideas...

JIF® Irresistible Peanut Butter Cookies

Yum! Just took my last batch out of the oven... these are really good. Didn't use Jif (sorry, Jif) but other than that followed the recipe exactly. SO good... not "too" anything... not too sweet, not too peanut-buttery, not too bland ... JUST PERFECT! My new favorite PB cookie recipe!

Pork Chops for the Slow Cooker

We really enjoyed this. I used pork chops out of a large package which I had used half of the night before. The chops, using the recipe from the night before, were dry. This recipe made the chops fall-apart yummy and not at all dry. We doubled the sauce so we would have enough to pour over rice (we ended up having way more than necessary) but, according to others' suggestions, did NOT double the soy sauce. Had a slight Korean BBQ taste. Will definitely make again!

Cranberry, Sausage and Apple Stuffing

I am rating this 5 stars because it was really good, but I am going to do some things different next time. I used fresh dried bread (instead of stuffing cubes) which resulted in a more "mushy" texture than I like. I like seeing the individual cubes of bread, so next time I'll use Mrs. Cubbison's stuffing (or is it dressing? The big ones...) cubes. The only other thing i'll do is reduce the poultry seasoning by a tsp. It seemed to be the main taste and so a little reduction will help, I think. Also, I chopped the apples a bit small and they totally disappeared. Next time I'll do bigger chunks. Other than that this is a great recipe and I'll definitely try this again!

Easiest Mushroom Sauce

Like another reviewer I changed the servings to 8 so that I needed only a 8oz package of mushrooms. I diced them as suggested and sauteed them in the sauce pot with the green onions in the butter first to soften them and then added one can of beef broth. Once the broth started to boil I added the amount of Wondra (not regular flour)suggested, a little at a time, continuously stirring. I added just a few dashes of salt and pepper. The sauce turned out DELICIOUS! The ONLY thing I'd do differently next time is to either cut the mushrooms smaller (maybe use the food processor) OR cook them even softer before adding the broth. Nevertheless the taste was great and this was a super-easy sauce which tasted like I had cooked it for hours! YAY.

Vegetarian Cottage Cheese Patties

I'm being kind by giving this recipe 4 stars because I think my proportions were off somehow. I fried with the lite coating of breadcrumbs on top as suggested. Instead of then baking the patties with mushroom soup on top I baked them without the mushroom soup and added a homemade mushroom sauce when they came out of the oven. They were a bit dry and like I said, I think my proportions were off (too much oats?). Because I like the idea i'm going to try to make this again paying better attention to what i'm doing, and I will bake with the mushroom soup (or the sauce) on top. This meal DEFINITELY needed a green counterpoint ... definitely will be serving with a nice salad next time.

My Chili

This recipe was very good. After reading others' reviews I did 2 cans Mexican flavored stewed tomatoes and 2 cans regular stewed tomatoes ... and I'm sorry I did. I WILL make this again using the 4 cans of REGULAR stewed tomatoes. The only other thing I did different was to add a large can (28 oz?)of tomato sauce instead of the 14 oz. I think the end result was perfect ... not too thick, not too loose. Served with homemade corn bread, chopped onions, shredded cheese and a dollop of sour cream. YUMMY!

Spinach Lentil Soup

My husband made this tonight per my instructions, doing the water/broth change as suggested by many others. I also had him put in a half of a kielbasa which amounted to 7 oz, not 4. There was DEFINITELY not enuf liquid in this "soup" (which was more like a lentil stew) so for sure nexst time I'll add more broth (10-20 oz more) and theres no reason why to not add the rest of the kielbasa. I also will cut the kielbasa in bigger pieces ... the recipe said "chopped" and my husband took it pretty literally and did chop it into pretty little pieces. I loved the spinach flavor (used 2 bunches of fresh). Lastly, even with just the little bit of red pepper flakes it was pretty spicy, so if you have little kids you might want to leave it out altogether. All in all this was pretty good and with some tweaking the recipe could be great.
