Ground Beef Shepherd's Pie

My husband brought home a lb of ground beef and I just didn't want another meatloaf or hamburgers. Then I found this recipe, and it actually was very good.. I kind of used the recipe as a "shell" and it turned out well. Its the type of recipe you can tweak to your liking. I cooked the onions a few mins and then browned the beef w/the garlic in it. The meat MUST be seasoned well.... I added a LOT of garlic, salt, pepper, seasoned salt, garlic powder, and sage. I added a can of a green bean/corn/carrot medley to the cooked beef mixture as well as some french fried onions which I had left over. I made instant mashed potatoes (used the "2-3" servings which was perfect) to which I did add the egg and water (about half of what was in the recipe). It cooked longer than what the recipe said (I think it cooked for about 35 mins before the potatoes got brown, I added some cheese to the top, cooked it another 5 mins, and YUM. It was quick, easy and versatile. I'm sure i'll be making it again!!!

Peach Cream Pie I

I made two of these pies last night... this was my first time making peach pie (although i'm not new to pie-making in general). I would make this again with a few changes. I would add cinnamon to the sugar/flour/butter mixture. This time I sprinkled it on top but I think it belongs mixed up. I did add an extra teaspoon of vanilla and I'd stick with that, too. I cooked them at 350 for 1 hr and 15 mins... still, the crust on the bottom was soggy somehow, maybe it would be regardless because of the peach-juices. I think i'd up the time in cooking to at least 1.5 hours... I guess I'll check out what other peach pies are cooking at. The pie does have good taste. A tad too much sugar .. i'd cut the sugar down to 3/4 cup next time. Also a bit more instruction on how to (or even IF to ) peel the peaches would be nice. I did peel them (dipping them in boiling water for about 20 seconds, then putting in cool water.. really did the trick). One other thing... this is not your typical "peach pie" and to me more like a peach kugel, so if you're looking for a traditional peach pie look elsewhere. Nevertheless it had a good taste amd like I said, I'll make this again with my changes. Good luck. EDIT: I made this again, cut down the sugar, etc. I don't think i'll be making this again. It was STILL too sweet, and much too soupy. I'm changing my stars from 4 to 3. Sorry... will keep looking for a traditional and delicious pie!

Thighs on Rice

Well I tried this tonight, using other reviewer's changes. The only reason I gave this two stars (as opposed to only one)is that I think that if I had made the recipe as written, it would have turned out better. What I did was add more water, add spices, only use 1.5 tbs of butter, add frozen veggies, cook with foil over for 45 mins and then take foil off for 15 mins. What I got was undercooked (after 45 mins) soggy chicken/rice. Then 15 mins later the rice was overcooked (but chix still slightly undercooked)! The frozen veggies were, of course, overcooked. The rice was overcooked and tasteless. The chicken was okay, but it would have been better had I just baked it regularly with olive oil and spices on it. If I were to make this again (which I won't!) I'd completely skip the frozen veggies (have a side of veggies or salad instead), use maybe just a quarter cup extra water, use the recommended amount of butter (for you people who complain of it being greasy... TAKE THE SKIN OFF YOUR THIGHS!), add some garlic, seasoned salt, cook recommended time (maybe more) UNCOVERED. Good luck.

Artichoke Chicken

This recipe is really really good! The chicken was very tender and the topping is great! I asked my babysitter to put this together for me one night, and by mistake she used the entire package of breasts (8) instead of just 4. It was still good, so if you have more than 4 breasts you can use them, it's still good. One thing though... I was confused by "chicken breast halves." I'm not sure if I was supposed to cut the breasts as they come in the package in half or not. We didn't, but we did up the baking time to a full hour at 375. It was still delicious and the breasts, even the big ones, were cooked to perfection.

Simply Lemon Baked Chicken

This chicken was very good... the outside was crunchy and the inside was tender and juicy. I followed the recipe exactly except I raised the temp to 350 and cooked it for about 2.5 hours. It turned out fine. Next time I would add a few more spices instead of just paprika... maybe some seasoned salt, rosemary, etc. Otherwise, it was really delicious and there WILL be a next time!

Aunt Anne's Sesame Cookies

These were a lot of work. My "logs" kept getting bigger and bigger. When I took them out of the oven they seemed grossly undercooked. So I put them back in for what was apparantly too long.... although they didn't appear brown they were now as hard a logs. Nobody really liked them.

YUM YUM YUM!!! This recipe is fabulous. I made the marinade according to others' recommendations. I cut the sugar and the oil in half, and it was PERFECT. You can definitely tast the sugar so half is without a doubt enough. I'm sure if you're eating sugar free (I am but since I am bringing this to a pot luck I didn't want to experiment just now) you could make it with Equal or similar. Because I didn't notice this is supposed to marinade overnight, and since mine will only marinate for a couple of hours, I didn't add the onions or the mushrooms. However I did a LARGE head of cauliflower and almost 2 heads of broccoli (my fave), 2 stalks of celery, and took someone else's suggestion and did one red, yellow and gr. pepper. And that's it! It's truly yummy!

Caramel Brownies III

This recipe, although tasty, was way way way too rich from all the butter. If I make it again I would cut the butter from 1 and 1/2 stick to just one stick... and that might be too much, too. The caramel/chocolate layer was yummy, though, and the dough, although cake-mix,tasted very homemade.... nobody knew otherwise. Also, my preferance is a more cakey brownie and these were very flat and dense... which I know a lot of people like. Even with the caramel/choc layer these were not too sweet, just too buttey. 3 stars because of the over-the-top butter taste.....

Blueberry Pie

The tast was great. I made w/frozen blueberries and therefore added 5 tbls of cornstarch. Nevertheless it was a bit runny however the taste was NOT compromised one bit. So next time I'll add another couple of Tbs of cornstarch or maybe some flour. There WILL be a next time... it was delicious!

Paella

This recipe was great and surprisingly easy. I added 1/2 cup wine and only did 3 cups broth, but next time I'll follow the recipe and omit the wine. The only thing I'd change is the green peppers which aren't a fave of mine anyway. I did add peas to mine, and I'd do that again, and just leave out the peppers altogether. It was a delicious recipe and presented very beautifully. Thanks Amy!

Angel Hair Pasta with Shrimp and Basil

WOW... this is one of the best things that has ever come out of my kitchen! I kid you not!!! This was absolutely delicious! Some minor variations: I tripled the garlic and a little more wine (I used cooking wine) COULD be used, but not necessary. I did use 2 -14 oz cans of diced tomatos (for 2 people)... it was enough but next time I might use 3 cans, for more leftovers. For 4 people I'd def use 4 - 14 oz cans. A DEFINITE WINNER!!! Apple Pie by Grandma Ople

This apple pie is great. I've made it 4 times already. Changes are minimal: needs cinnamon (at least a teaspoon) and nutmeg. Other than that it's PERFECT!!!
