Happy Shrimp

So absolutely loved this. Made exactly except used cooking wine instead of drinking wine. Next time I'll double everything except for the shrimp (basically, I'll be doubling the sauce and spices). Served over linguini. Loved it. Will even be better with more sauce to go around. LOVED LOVED LOVED.

Prize Winning Baby Back Ribs

Made twice, following the directions exactly. Pretty darn good, although the first rack, a baby rib rack, was a bit dried out. The second rack was meatier and juicier. I haven't had luck making ribs with the exception of this recipe, but I can't say my search for the perfect rib recipe is over. But this is really good.

Pineapple Angel Food Cake I

Very good. I'm not a fan of Cool Whip so I just sprinkled a little powdered sugar on each piece and used canned whipped cream, again per piece. Will make again for sure. Super easy.

Ten Minute Enchilada Sauce

Chili Rellenos Casserole

I doubled this recipe and used the 9x13. I used 2 cans diced chills and 2 cans whole chilies because that's what I had. I took other reviewer's suggestions and used enchilada sauce instead of tomato sauce. I didn't have any in the cupboard so I made "10 minute enchilada sauce" from this site. Sooo good! My daughter said she'd like it better if the next time I used just diced chills because she didn't like the large slices. I will make again. Very good!

Broccoli Garlic Angel Hair Pasta

Why is it then whenever I use Angel Hair pasta, it always balls up when trying to mix? I also found this to be lacking in taste somewhat (use more garlic, and I put a LOT of Romano cheese on it while eating). I may try again using fettuccini or something with a bit more body.

Tuna Noodle Casserole from Scratch

Oh so good! So glad to find a way to make tuna casserole but bypass the canned soups! Tasted waaaaay better (cleaner) than the canned soup version! LOVE.

Banana Pudding Poke Cake

I felt that the banana pudding fake banana taste overwhelmed the cake. Next time I'll use one vanilla and one banana pudding. I sliced one banana over the pudding, under the cool whip, and next time I'll add more. It was good the day we made it but soooooo much better the next day so I really would suggest making this in advance

Cheryl's Spinach Cheesy Pasta Casserole

Followed recipe closely. Used penne instead of shells. Sprinkled garlic powder over each sauce layer. Added pepperoni slices which I cut in quarters. Soooooo yummy! Came out of pan when cut like lasagna (not spooned out). Really great and easy to make. Good weeknight yummy dinner!!!!

Healthier Brown Sugar Meatloaf

This was good. I used Panko because that's what I had. I used 1 1/2 cups of panko because that's what another reviewer said was perfect but I think that was too much and I will use the suggested amount next time. I chopped the onions so much that were almost emulsified because my daughter hates onions in meatloaf.....she was none the wiser and had no idea onions were in this recipe. I'll make again.

Tortellini Soup

Delish. I used chicken broth instead of vegetable because I'm not a veg broth lover. I used frozen spinach because that's what I had. It was still delicious and I can only imagine that fresh would have been amazing. I added rough-chopped carrots and celery which only added to the yumness. Easy and yummy recipe!!

Chicken, Stuffing and Green Bean Casserole

This was plain but good. It almost seemed a bit dry with only one can of soup, but I wouldn't put in another because then it would be waaaay too soupy. I did add a handful of craisins and would have added a bit of french fried onions but I didn't have them (I thought I did). A good simple meal, very quick to make, and everyone liked it. Will make again, next time making sure I have those danged french fried onions!!!

Garlic-Herb Roast Pork

Oh my gosh. SO good. The paste was to die for. It cooked a LOT longer than the recipe said but that may be because I had potatoes roasting in the oven as well. Will DEFINITELY make again, and may use the paste for other things too.

Christmas Morning Egg Casserole

This was quite good! Much easier than my previous breakfast casserole. I used Sara Lee Texas Toast and a couple of extra eggs. I also used shredded chedder instead of American cheese. I only had lunch cut Black Forest Ham which I cut up and still, this was a winner!!!

Mom's Candied Yams with Caramel

SOOO good! Luckily I had extra potatoes in the cabinet because one can did NOT cut it, so I tripled he recipe and everything in it except the pineapple because I only had two cans. I figured it couldn't hurt to cut back on the pineapple because there's a LOT of sweet going on in this recipe and I was right. It turned out PERFECT. Don't be scared ... for whatever reason this was not too sweet ... it was JUST PERFECT and it will be my go-to recipe for now on!

Quick and Easy Black Bean Soup

Wow wow wow!!! This was awesome! I doubled the recipe but didn't double the bacon (I just didn't have it). I substituted chix broth for the water (so used 4 cans broth for a double recipe, and no water). I used low sodium beans. The bacon was unappealingly floating around so I used the immersion blender instead of a masher, and I made it quite smooth. I didn't make the relish but I did serve it with green onions and a big dollop of plain Greek yogurt. I can't believe how delicious this soup was! I'd give it 10 stars if I could!!!!
