Easy Broccoli Slaw Salad

Reviewed: Feb. 21, 2015
This is a variation of one of my favorite go-to salads..but mine only uses 1/4-1/4 c sugar (your taste) and the flavor pack from an oriental Ramen noodles pack. The noodles ARE put in uncooked (crunch them in the packet as well as you can before the wrapper breaks then crunch/ break up well when adding, as the large "groups" don't hydrate well) and I like to put them in the dressing an hour or two before mixing the dressing through it all, and serving, depending on how much crunch you like. I also use sunflower nuts instead of the almonds (personal taste and I keep a jar on the fridge for most salads). I like the addition of raisins but dried apricots or craisens would be fun too. Really a great salad for a quick put together.

Healthier Chicken Pot Pie IX

Reviewed: Feb. 21, 2015
This is a great recipe. It is better than the recipe I grew up on and brought forth true "comfort food" rewards. I too added garlic, tarragon, basil and fresh parsley (which I rescued from the garden before frost and is living happily in a pot by the kitchen window). I felt it came together well and I like that I know all the ingredients. Because I am single and did not want to have a soggy crust before I was able to eat it all, I made "J.P.'s Big Daddy Biscuits" from this site (wonderful) and put the mixture over them...wonderful. SO GOOD.

Apple Crumble Pie

Reviewed: Jan. 5, 2015
This was really good. I too mixed the sugar/cinnamon into the apples along with a bit of four and put cinnamon in the crumble. I was afraid of burning that great topping so I baked it a little lower and it took longer than expected to get the apples tender yet overall this is a great recipe. This is a 4 1/2 stars recipe with 5 saved for OMG recipes that usually involve cheese. thanks...see you at Thanksgiving next year if not before.

Old-Fashioned Scalloped Corn

Reviewed: Jan. 5, 2015
I made this for our family Christmas dinner in hopes it was similar to my sister-in-laws late mother's recipe and she loved it. We used more whole wheat Ritz and butter than the original recipe to give the proper crunchy top to a larger baking dish. I think a Tbsp of flour would tighten it up better and will do that next time, yet the flavor was spot on and wonderful. thanks.

Very Easy Mushroom Barley Soup

Reviewed: Feb. 3, 2012
I followed recipe very closely except I used the wonderful Roasted-vegetable stock on this site and a quick cooking barley. This is a great soup . I will freeze servings and let you know if it is not great each time I prepare one.

Bacon Wrapped Barbeque Shrimp

Reviewed: Mar. 7, 2012
I love these... I make these to impress on the grill. I precook the bacon put several bacon wrapped shrimp on each long pre-soaked bamboo skewers (and I have had no trouble keeping them wrapped up in the fridge for a couple hours at this stage- so you can make them ahead ) and when ready, grill them until the shrimp are nearly done, then wipe on some BBQ sause just before I take them off the grill. That little char from the grill take them to a whole new level.

Healthy Banana Cookies

Reviewed: Feb. 21, 2015
I really love the concept yet they did not bring much flavor. I used other reviewers suggestions and sub'd peanut butter and raisins and added cinnamon, gr. ginger and flaked coconut and I still thought they were a little bland...yet it is a great idea and I will keep playing with this. thanks so much. UPDATE. I refrigerated them and after a few days the flavor improved...so I am adding a star. Really great, fast, healthy breakfast.

Slow Cooker Pheasant with Mushrooms and Olives

Reviewed: Jan. 3, 2015
This was wonderful. I had a single pheasant but used the full recipe for the sauce, using baby portabellas and a Riesling (no olives). I cooked it on high for 4 hours and feel I lost too much sauce in that high heat so I will make more next time. I felt the breast got a bit overdone but the dark meat was perfect. I will make this again. I make stock from the bones and will have that wonderful pheasant stock for the next bird or whim. Thanks for a great recipe.

Granny Kat's Pumpkin Roll

Reviewed: Dec. 16, 2014
I have made this a couple times and always got great reviews. Forgive me if this is too obvious, but when releasing the cake from the parchment, don't lift the paper straight up, bring it back low/against itself and it will release without additional tools. I always roll from the long side and cut into two cakes, wrap in plastic then foil and freeze in a freezer zip bag so that I can whip one out at a moments notice and it is wonderful even months later. Great recipe. I love this site.

Pumpkin Roll Cake

Reviewed: Dec. 16, 2014
This recipe is 1/4 tsp. nutmeg off from one I cut from a newspaper years ago. It also recommended using parchment paper. White Cheese Chicken Lasagna

Reviewed: Dec. 10, 2014
DANG THIS RECIPE; This could cost me in extra pounds....What a wonderful recipe. I did some normal swap outs (whole wheat penne, cottage cheese, spinach, chicken thighs) and it was still crazy wonderful. I froze half of it so that I would not eat it all and I will update if that creates a problem. thanks for a great recipe..I think.

Sweet Potato and Black Bean Chili

Reviewed: Feb. 24, 2014
I loved this. I roasted the pepper with the potatoes and then decided later that I wanted more potato so I diced up two more and added them with the tomatoes and both were good but I think searing the spices to the potatoes during the roasting really added to the flavor. Roasting the potatoes really improved the texture. I will roast sweet potatoes in these spices again to serve alone, they were so good (maybe that is why I needed more for the chili). I made this with the Awesome and easy creamy corn casserole and they were great. thanks for a great recipe. Ymmmmmmm.

Awesome and Easy Creamy Corn Casserole

Reviewed: Feb. 24, 2014
Wonderful. I used the melt the butter in the pan trick and I am sure that saved me a lot of work. I did not have a can of corn (used one can creamed corn) and used two loaf pans and it was perfect in 45 minutes. I loved it. Thanks.

Merenges

Reviewed: Dec. 21, 2013
These remind me of my mother's favorites so I wanted to make them for her for Christmas. I did not have cream of tarter and I recall her recipe had vinegar so I made them with vinegar. I cooked them until most pulled off the parchment paper (I do not trust my oven but think it was at about 225-250 and cooked the for 30 mn) and then turned off the oven to let them cool in the oven. They are wonderful and exactly as I remember them. Thanks for, what I trust will be, making an 87 year old woman happy.
