Ham and Sweet Potato Soup

Reviewed: Jan. 14, 2015
Exceptional. The flavor is wonderful. I used extra sweet potato and ham and next time I will use more and bigger pieces of celery, carrot and green pepper. The creamy broth has enough flavor to carry a lot. Really a simple, fast and delicious soup. Thanks for a new regular soup.

Apple Crumble Pie

Reviewed: Jan. 5, 2015
This was really good. I too mixed the sugar/cinnamon into the apples along with a bit of four and put cinnamon in the crumble. I was afraid of burning that great topping so I baked it a little lower and it took longer than expected to get the apples tender yet overall this is a great recipe. This is a 4 1/2 stars recipe with 5 saved for OMG recipes that usually involve cheese. thanks...see you at Thanksgiving next year if not before.

Old-Fashioned Scalloped Corn

Reviewed: Jan. 5, 2015
I made this for our family Christmas dinner in hopes it was similar to my sister-in-laws late mother's recipe and she loved it. We used more whole wheat Ritz and butter than the original recipe to give the proper crunchy top to a larger baking dish. I think a Tbsp of flour would tighten it up better and will do that next time, yet the flavor was spot on and wonderful. thanks.

Slow Cooker Pheasant with Mushrooms and Olives

Reviewed: Jan. 3, 2015
This was wonderful. I had a single pheasant but used the full recipe for the sauce, using baby portabellas and a Riesling (no olives). I cooked it on high for 4 hours and feel I lost too much sauce in that high heat so I will make more next time. I felt the breast got a bit overdone but the dark meat was perfect. I will make this again. I make stock from the bones and will have that wonderful pheasant stock for the next bird or whim. Thanks for a great recipe.

Granny Kat's Pumpkin Roll

Reviewed: Dec. 16, 2014
I have made this a couple times and always got great reviews. Forgive me if this is too obvious, but when releasing the cake from the parchment, don't lift the paper straight up, bring it back low/against itself and it will release without additional tools. I always roll from the long side and cut into two cakes, wrap in plastic then foil and freeze in a freezer zip bag so that I can whip one out at a moments notice and it is wonderful even months later. Great recipe. I love this site.

Pumpkin Roll Cake

Reviewed: Dec. 16, 2014
This recipe is 1/4 tsp. nutmeg off from one I cut from a newspaper years ago. It also recommended using parchment paper.

White Cheese Chicken Lasagna

Reviewed: Dec. 10, 2014
DANG THIS RECIPE; This could cost me in extra pounds....What a wonderful recipe. I did some normal swap outs (whole wheat penne, cottage cheese, spinach, chicken thighs) and it was still crazy wonderful. I froze half of it so that I would not eat it all and I will update if that creates a problem. thanks for a great recipe..I think.

This is wonderful as written. I add extra lemon juice if I am not using fresh lemons and it is still great.

This is a wonderful soup. I too used an immersion blender to help thicken it and omitted the dill. I will make this again.

Chef John's Pumpkin Pie

Reviewed: Nov. 30, 2014
I made this for our Thanksgiving pie this year and got great reviews from the family...the biggest was "How did you keep it from cracking? I have never seen pumpkin pie not crack." I did not use the 5 spice instead using more nutmeg and I think it was great. thanks for these great recipes.

Vinegar Pickled Carrots

Reviewed: Nov. 30, 2014
I made this for Thanksgiving and believe that this needs more sugar to cut the strong vinegar taste. I made them on Sunday and the baby carrots were still too crunchy for Thursday. The adults did not care for them but the toddlers liked them so they went home with them. I will try this again with other veggies as I like the idea and ease.

Easy Homemade Pie Crust

Reviewed: Nov. 30, 2014
I used this for my family's Thanksgiving pumpkin pie and we did not find it to have the flaky crust or wonderful flavor that others reported. I do not have a food processor, using instead a pastry cutter. I think I am going back to lard.

Spiced Butternut Squash Soup

Reviewed: Nov. 6, 2014
This is a very good soup. I would make some changes next time to cut the leek flavor. perhaps I used too much as I had smaller garden leeks. Overall a great soup. thanks

Garden Fresh Tomato Soup

Reviewed: Oct. 1, 2014
I blanched and seeded the tomatoes before I read the reviews that it is not necessary so next time I will not go thru the work. I sautéed the onion and garlic before adding the rest and did not have whole cloves so used 1/2 tsp ground cloves. I thickened with corn starch and chicken broth after taking the stick blender to the soup then added fresh basil and oregano. It is good soup. I fear that the variety of tomato matters as I did not find it as rich as I was hoping for.

This is wonderful. I thought that the (brown) sugar transferred to the beets yet it did not fail to impress.

Sweet Potato and Black Bean Chili

Reviewed: Feb. 24, 2014
I loved this. I roasted the pepper with the potatoes and then decided later that I wanted more potato so I diced up two more and added them with the tomatoes and both were good but I think searing the spices to the potatoes during the roasting really added to the flavor. Roasting the potatoes really improved the texture. I will roast sweet potatoes in these spices again to serve alone, they were so good (maybe that is why I needed more for the chili). I made this with the Awesome and easy creamy corn casserole and they were great. thanks for a great recipe. Ymmmmmmm.

Awesome and Easy Creamy Corn Casserole

Reviewed: Feb. 24, 2014
Wonderful. I used the melt the butter in the pan trick and I am sure that saved me a lot of work. I did not have a can of corn (used one can creamed corn) and used two loaf pans and it was perfect in 45 minutes. I loved it. Thanks.
