Easy Lemon Cake

I made this cake for Easter Sunday. I used lemon mix instead of yellow b/c my family loves lemon. The cake was good. It was best right out of the oven and then a few days later. The days between, I didn't really care for it. I also loved the icing...I doubled it b/c I loved it so much.

Mandarin Orange Cake I

I love this cake! (also known as Pig-Pickin' Cake!) It is delicious...when I made mine, I accidentally bought lemon mix instead of yellow mix. It still turned out delicious. Its really fun to think of all the combinations that can be made with this recipe! (Try lemon pudding or pistachio pudding instead of vanilla...etc!)I wish that I could taste the madarin oranges but I can't...it okay, though b/c the cake is great no matter what! Next time, I may use half pineapple and half mandarins in the icing? I'll let you know how that one works out! **Make sure you keep the cake refridgerated...its great year round, I'm sure, but especially on a hot summer's day!!** **Another hint: Try draining the pineapple juice and use only about 2/3 to 3/4 of it in the icing to keep it from getting runny...ESPECIALLY if you use fat free or light whipped topping!!**

Chocolate Covered Cherries

As always, I made a slight modification just to make things easier: I bought tubs of the microwavable dipping chocolates that is now available in most stores to dip the cherries in. Here is a very helpful tip: Buy the mini-muffin/cupcake/candy cups to place each cherry in after dipping. I found mine at Michael's craft store but I know they have them in grocery stores, as well. I think it looks nice to use these when presenting them, especially if they are in a candy box. Also, it is helpful if you dip the cherry and place it directly into the cup...because when you pick the cherry up from whatever surface, there is a spot where the chocolate doesn't cover and the juices from the filling will seep out. What happened to me the first time round with this recipe was this: I placed the dipped cherries onto wax paper to dry. Then, I moved the cherries from the wax paper into my container. The filling seeped out through the bottom part of the cherry that had touched the wax paper and there was no chocolate there. So, it helps to put them into the candy cups directly after dipping them. Hoped this all made sense!

Zucchini-Coconut Cookie Bars

I don't like dates so I used pecans instead. This recipe was very good but it disappointed me a little bit. It was more like a cake instead of brownie or cookie bar. I also could have used lots more icing since I thought it was more cake-like.

Peanut Butter Pie I

I made a few modifications: I just bought a pre-made oreo pie crust so that I didn't have to make one. Also, I didn't have whipping cream so I used an 8 oz. tub of cool whip. Since it is sweetened already (unlike making your own from whipping cream), I left out about 1/2 of the sugar. The pie was good but VERY VERY rich. It was difficult to finish a whole slice in one sitting. Still good, though.

Angel Food Cake III

My cake did not come out very well. I most likely blame myself rather than the recipe...or at least I am assuming the blame is all mine...I read on FoodTV.com that you can substitute 1 C cake flour with 1 C minus 1 Tbsp of regular flour. Also, I might have over-mixed the batter making some of the air bubbles collapse. My cake came out very heavy and spongy...nothing like what an angel cake should be like. Either way, it was still tasty...especially with my icing made of lemon juice and powdered sugar!

Cranberry Sauce II

My family never touches the cranberry sauce at Thanksgiving (we usually use the can) but I'm a fan of it and decided to make some home-made and used this recipe. It was a hit~we didn't have a single bit left over!!! I did make a few modifications: I used a little under 3/4 C sugar instead of only 1/2. I also put all ingredients into a pot and cooked it on the stove until the berries popped. Then, I placed it all into a blender to make it smooth. I then added some tangerine zest. After letting it cool in the fridge, it was the perfect "jelly" consistency.

Grilled Caribbean Chicken

This recipe was really yummy but I made LOTS of alterations to it. I didn't use mango chutney b/c I didn't have any. I used dried ground ginger and garlic b/c I didn't have any fresh. (I decided to make this last minute and didn't have time to run to the store.) I also had no pepper sauce so I just added some chili pepper, red pepper, and paprika spices. I also used dried oregano instead of fresh. I also added a little fresh cilantro just b/c I had a lot of extra in my fridge. I cut the chicken into cubes and put on kabobs. It was really delicious. Thanks for the recipe...and for all of those who try it, don't be afraid to used the dry ingredients like I did~mine tasted great!!

Annie's Fruit Salsa and Cinnamon Chips

I really liked this recipe. I made more chips and left out the preserves, as suggested in many of these reveiws. To make my salsa a little more like salsa and less like pico de gallo, I pureed about 3/4 the fruit and left the other part in as chunks. I also added just a little crushed pineapple. YUMMY

Cool 'n Easy Pie

This is my favorite desert year-round. (I use frozen-then-thawed strawberries when they're out of season.) I've tried using LIGHT and also FAT FREE whip cream for this to cut back on fat and calories. I wouldn't recommend using FAT FREE whip cream. When using LIGHT cream, reduce the amount of water to keep the pie firm and to keep it from being runny. **Also, try using PINEAPPLE gelatin instead of strawberry. ORANGE is yummy, too~taste like a vanilla/orange creamcicle!
