This is tasty but.. I suggest using fresh parsley when sautéing the eggplant. Also, make sure to sweat the eggplant before cooking for about 20 min. They sauté faster and it gets the bitterness out! Also I add a yellow squash instead of two zucchinis, adds a different flavor to the pot!

A house favorite! Great group meal! I added a bit of chili flakes and spicy sausage, along with an onion and a bit of white wine along with the boiling water! Mmm mmm. Also used baby red potatoes and cooked them a bit longer.

Penne Pasta with Veggies

So good! The only thing I would suggest is giving it a stir when it is half way through and using a bit less butter. That way it is not as oily, the top layer will not crisp up, and it will ensure that your veggies will not vary in consistency throughout the dish. Definitely a repeat! Next time I am adding mushrooms in the mixture, and sautéed prawns to top it off! Mmm.. mmm..

Best Marinara Sauce Yet

This was good, but it was great when I cooked the garlic and the onions first. I also blended only some of the tomatoes and smashed up the others with my hands. This helped the sauce be a little more chunky instead of a puree all of the way through. YUM

Italian Peas

This side dish has always been on the table growing up. I have to say that I prefer when my mother cooks them with canned sweet peas, they have a little more flavor than the frozen peas. But either way, they are a staple in Italian Side Dishes. MMM MMM MMM. Please make sure to do exactly as the recipe says though, do not use a microwave to cut corners!

Molasses Cookies

These cookies are amazing! I had to make more the next day! Make sure that they only cook for 8 minutes, they are quick to burn if you do not keep your eye on them. I also add just a tad more molasses so they taste less like a ginger snap. Yummm yumm!
