Alphabet Soup

This is basically the same as the way I make vegetable and beef soup. Using the vegetable juice was recommended to me by a nutritionist years ago. You can use any combination of veggies that you want, cover it with the juice and you have a great soup. I usually use frozen mixed veggies, add potatoes, onions, garlic, sometimes cans of black eyed peas, white acre field peas, butter beans, or just about anything you might have in the pantry. I generally just cook up some ground beef, or some chicken to add to it. Season it the way you like it. Yum :)

Chunky Stew

This is pretty much what a nutritionist told me about many years ago. I sometimes use chicken, instead of ground beef, or it can be just vegetables. I generally use mixed veggies and add whatever I want...potatoes, onions, black eyed peas, lima beans, minced garlic...whatever! Cover with the vegetable juice and season how you like it. This is as good as you wanna make it. Just put the stuff YOU like in it. Delicious.

Super Squash

This stuff is delicious! I made it exactly by the recipe and my boyfriend and I ate more of it late at night and even the next morning. We could not get enough! Yum...I'm thinking I may want some more tonight!

Grandma's Vegetable Soup

This is very similar to a soup that I make. I use ground beef, various veggies and V8 juice rather than regular tomato juice. I've never added ginger, but sometimes add minced garlic. It's delicious and freezes well.

Potatoes in Paper

I love these. I season the potatoes and onions with salt and pepper and use grated cheese instead of cheese slices. They are sooo good. It seems that if you have enough moisture in the packet that there isn't a real problem with the cheese sticking to the foil.

Home-Style Vegetable Beef Soup

My nutritionist told me how to make this years ago. I love it. I usually use ground beef, but sometimes put chicken in it. I start with frozen mixed veggies and add various things depending on what is available. Potatoes, onions, garlic, black eyed peas, field peas, lima beans, butter beans...whatever you like can be thrown in this soup. I like my soup thick, so I cover it with vegetable juice and sometimes add a little water. I'm not much on veggies, but love this.

Sausage Casserole

I wanted to make something for my sister in law for Mother's Day tomorrow and thought this looked good. I was a little nervous about taking her something I'd never made before so I decided to make hers in a smaller pan and make me a small dish tonight so I could try it. This was so good! I wish my little dish had been bigger, but then I would have gorged myself. I only made slight changes to the recipe. For me, eggs and potatoes have got to have some salt and pepper, so I added a little to each mixture. I also mixed a few onions in with the potatoes and used sharp cheddar instead of mild. I've got my fingers crossed that my sis in law will invite me to eat breakfast with them in the morning!

Easy Chicken Casserole

Chocolate Eclair Dessert

This is great and so easy to make. I made my second one with Banana Cream pudding to give it a little extra taste (nothing wrong with the original vanilla). I think next time I will try it with Cheesecake pudding. My roommate doesn't like cheesecake (go figure), so maybe I'll get more dessert this time!

Barbecue Beef Cups

This is really easy and delicious. I've made them with various ingredients. I often put the meat and cheese in layers for a more cheesy taste throughout. I tried eggs and sausage, which was good, but will have to try it with the gravy on it as someone suggested. Just thinking about it makes me want to go make some. The great thing is that you can put most anything you like in the cups.
