Excellent. Too much fat for an all the time dinner, but perfect for the occasional treat!

Jamaican Beef Patties

Reviewed: Apr. 19, 2007
It was good, the flavors were too strong for my family, so I think I'll adjust them to something more traditional. Loved the crust and the pick it up without it falling apart. I think you could stuff it with just about anything and it would be a nice snack.

Love this stuff! Great with slices of tomato, basil and a little olive oil. Or make smaller rounds and let every one make their own.

I used a bag of frozen mixed berries, added to the cherry pie filling, then topped them with vanilla yogart right before serving. Every one liked it.

Jamaican Jerked Chicken

Reviewed: Mar. 19, 2007
I sub'd Pineapple juice & some crushed pinapple for the peppers (family doens't like hot food) and it worked very well. Added more crushed pineapple to the sauce for basting. I think next time I'll let it marinate longer than 8 hours.

Big Al's K.C. Bar-B-Q Sauce

Reviewed: Mar. 19, 2007
Good sauce, but my family didn't like the cinnamon, they thought it was too strong. Next time I think I'll use a little less of it and we should be good to go!

Cheesy Macaroni and Beef Casserole with Thyme

Reviewed: Mar. 16, 2007
It was rather bland, so the second time I fixed it I used our usual whole wheat pasta and a cheese blend that had sun-dried tomoatoes, basil and added roasted garlic. A nice, grown up macaroni dish.

Sweet Irish Bread

Reviewed: Mar. 16, 2007
I also used the Vanilla yogert, but added a dash of vanilla extract and a tablespoon of cinnamon. I served it at work for St. Pat's day with icing on the side. Toasted, then spread with icing it was a big hit.

I switched the bacon to turkey bacon, and the mayo to fat free, it still tasted wonderful. No one could believe it was lower in fat!

this was wonderful, but tasted slightly on the salty side. The meat was tender and juicy and made great sandwiches.

My husband and I really liked the combination of sweet and spicy. It wasn't quite as thick as I like it, especially for use when smoking.
