Cajun Chicken Pasta
With a few changes, this Cajun recipe turned into a healthy dish that we love and will definitely make again! Changes: 3 chicken breasts, 1 T Cajun seasoning, no butter, 12 mushrooms, 3 green onions, one clove of garlic, no garlic powder, no salt, 3/4 c nonfat sour cream, no cream, 1/2 box linguine. We will enjoy this as leftovers tomorrow, and I will be making a bit more linguine to add to the dish. Next time I'll probably use 3/4 box from the start. Thank you for sharing your recipe, Carol!

Spicy Orange Chicken
I experimented with the chicken part of this recipe today to use in a new dish that I made up! I marinated four cubed chicken breasts in the mixture exactly as listed, but I did not flour it or do the caramelizing process like the video suggested. I then cooked the chicken and added a green onion bunch, a red pepper, 20 fresh mushrooms, a can of pineapple chunks, two garlic cloves and a package of yakisoba noodles. YUM! My husband added some sweet chili sauce to his portion, along with some sesame seeds. We are thinking about making this again soon, but we'd leave out the noodles and instead add a few cashews and serve it over rice. The chicken was very flavorful and I anticipate using this recipe quite often from now on. Also, it provided me with a chance to purchase and cook with rice vinegar and fish sauce for the first time in my life! Thanks for broadening my horizons, Chef John!!

Bubba's Jambalaya
I tried this recipe for the first time last night, and my husband and I both declared it a keeper from the first bite! Changes I made: turkey bacon, no ham, 1 lb chicken, turkey sausage, petite diced tomatoes, 4 c chicken broth, no beef broth, no shrimp and added some minced garlic. I was concerned about adding the rice at the end due to other reviews, but it worked out great! The stirring seems to be the key, especially within the first few minutes. The Cajun spice I use is made by Weber, and 2 t was just enough. My husband usually puts extra hot sauce on stuff, but didn't with this recipe. We agreed that it's just enough spice for us, but would probably be too much for most kids or those who don't love spicy foods, so you might want to cut back on the spice in the beginning and add more later if desired.
