Spinach and Cheese Stuffed Pasta Shells

This was really easy to make especially since it was my first time making stuffed shells. I altered it a little bit though. I added cooked ground beef, italian seasonings & mozzarella cheese. I took out the fennel seed, salt and pepper cuz I thought it was just not needed. I did double the recipe for our large family but still only used 10 ounces of spinach and 4 garlic cloves. I think doubling either of those would've been overkill on the finished product. Since this was my first time making these, I wasn't sure how much filling to put in each shell. I think I may have overdone it bc I had quite a few shells left over, but whatever. I'll just use those for an easy lunch for the kids tmrw with sauce. :) With my adjustments, I filled a 9x13 pan and a 10x13 pan. Both were packed with shells.

Mama's Italian Wedding Soup

meatballs weren't as flavorful as i would've liked but overall a great recipe. it looked just like the soup i get at our italian restaurant near us. meatballs were labor intensive but i used another reviewers tip to roll meat into a rope and cut small pieces off. my daughter helped too. flavor was good. we used acini de pepe bc thats just how I've always had it. just don't ad too much pepe like i did. it was great the first day but we stored left overs in the fridge and by morning the pepe puffed up and really took over the soup. there wasn't enough liquid in it to call it soup anymore lol! it was sadly pepe surprise lol!

Grandma's Butter Noodles

very good. I have made this quite a few times and everyone loves it! Hard to go back to boxed pastas. The buttery taste works well with a red sauce but not so much with an alfredo. I use my bread maker to mix it while I prepare the rest of dinner and it fits this recipe doubled (8 servings). I haven't tried letting it dry out a bit and rolling and cutting. I guess I've always done it the hard way and cut it all without rolling it. I used a pasta wheel for a fancy edge just bc it was easier than a pizza cutter and mine has two blades.

Bread Machine Bagels

I made this recipe just as it says except I used the egg yolk on top of our bagels with a little melted butter mixed in. (in place of the egg white) It came out yummy and we have made this several times since. Usually we make this for dinner with egg and cheese in the middle, sometimes ham too. VERY YUMMY! I highly recommend you try it out lol!! I find that I need to add a tiny bit of water into the dough as it is mixing bc it doesnt QUITE mix in all the way. I just open the lid, add a bit of water and use a rubber scraper to get anything off the sides and mix it all as it turns around. OH and as far as the hole in the middle, i just pinch a hole in the center and swing it around my finger a little bit. Sometimes I leave it out too. I don't notice a difference in taste.

Chicken and Dumplings III

I gave this 3 stars because it is far too plain. A great basic recipe though. I used 3 cans cream of chicken and also a can of chicken broth. Added spices: adobo, sazon, oregano, lil tiny bit of minced garlic and lil bit of powdered onion (don't like the onion but like the flavor), also used 2 chicken bouillon cubes and sliced the pillsbury homestyle buttery flavor rolls into about 15 squares each roll. I used my hands to press it into a flat pancake and used a pizza cutter to save time cutting. I also added carrots and celery to my batch. Hubby and kids jump for joy when I make it. We also serve it over white rice sometimes....

Quick and Easy Chicken Noodle Soup

I just started cooking about a month ago and this was really easy to make and very yummy! I couldn't find veggie broth so I added extra chicken broth. Some other changes I made were: adding a little extra chicken and spices. Adding ANOTHER 14.5 oz can of chicken broth. I also cut the amount of onions in half since we are not big fans but I did want the taste. I used more noodles. I nearly doubled carrots bc I love them! I also added a little garlic powder, adobo and 2 chicken boullion cubes. It was very very very good! Next time I may add even more broth bc with all the additions I made to suit our large family, I noticed the amount of liquid boiled down into the ingredients. It would certainly still be classified as soup but... Haha!
