Slow Cooker Latin Chicken

I really liked this and so did my hubby! I made a few changes based on what I had on hand. I used two breasts (roughly one pound), frozen mixed pepper strips, flat leaf parsley instead of cilantro, and medium salsa. Other than that, the only other change I made to the recipe was I followed the suggestion of others and added a layer of corn on top of the black beans. I think it was a nice addition. When I make this again, I will probably add more veggies (celery, carrots, onion), but I like to make a recipe as close to "as written" the first time as possible. Thank you for sharing!

Slow Cooker Chicken Cacciatore

This was very yummy and I love recipes I can throw in the crockpot and forget. I only used 2 breasts, a 32 oz jar of Classico Tomato Basil sauce, 1 green and 1 red pepper, as that's what I had on hand, no mushrooms (didn't have any), but substituted sliced black olives, 1 yellow onion, and 2 cloves of garlic. It cooked on high for about 5.5 hours. The chicken was very tender and kind of fell apart while stirring and dishing, but that was fine. I will make this again and will definitely include olives whether I have shrooms or not!

Soy and Garlic Marinated Chicken

Yummy and easy! I added 1 tsp of ginger and a hearty splash of olive oil to the marinade. I let it sit all day while I was at work and just popped it in the oven that night. Very yummy. I baked it for 45 min at 350. Thank you for the great, simple recipe!

Winter Fruit Salad with Lemon Poppyseed Dressing

So yummy! I can't really rate the recipe as written, as I made a couple changes according to preference, but I would highly recommend this recipe. The only changes I made were to substitute pecans for the cashews and blue cheese for the swiss. It was delicious. I took it to Christmas Eve dinner and between 5 adults and 1 9 year old, we cleaned it up. I had everything ready to assemble when we arrived (I used another reviewer's suggestion and coated the chopped fruit with just a little dressing to prevent browning). Also, I only ended up putting half the dressing on and had the other half on the side if more was wanted. I think it would have been too much if the full amount was on the salad. Bottom line, a very easy and pleasing salad. On par with those I've had in nicer restaurants. Thank you for sharing!

Vegan Fajitas

Yum, yum, yummy, yum, yum! This was very good. I did make a few changes per other reviews and personal preference. I subbed half of the vinegar for lemon juice and didn't add quite the full amount. Even then, I think next time I would cut down a little more. I also added a bag of frozen shoe string fries to the veggies (I didn't marinate them) and left out the beans and corn (because I made a side of beans). I love potatoes in my veggie fajitas. I had them that way at a local restaurant and was hooked. It makes them so much more satisfying! Thanks for the recipe!

Southwest Corn Salad

This was delicious! I omitted the green chiles as I didn't have any on hand and added avocado soaked in lime juice and some diced english cucumber as suggested in other reviews. I also used radiatore pasta as it holds the sauce better. Thanks for sharing!

Slow Cooker Baked Beans

Very good! Thanks for sharing. I did make a few alterations. I made a vegetarian version, omitting the ham hocks. I also added a can of crushed pineapple, used 1/2 molasses and 1/2 maple syrup, a bit of garlic powder, and probably used a bit less ketchup and mustard than called for. I will definitely make this again!

Italian Style Winter Soup

Hubby and I both enjoyed this. As we're vegetarians, I had no problem making a healthier, meat-free version. I used Tofurky brand sausages, used brown rice instead of white, and substituted plain soy milk for the cream (also reducing fat and calories). It was delicious; I will definitely make again. Rice and Raisin Breakfast Pudding

Yippee!!! I love rice pudding, but thought I'd have to give it up now that I'm making an effort to eat healthier. This is great with the brown rice and soy milk, and I loved the added crunch of almonds. I only used about 1/2 of the syrup called for, and I did end up having to add extra liquids, too. But this was yummy!!! Thank you for sharing!

Tomato Garbanzo Soup with Rice

This had a nice flavor. I used black beans, instead of garbanzos to give a more mexican flavor. Leftover thickened up real good and were used as a burrito filling. Thank you for sharing.

Banana Bread Cookies

These were a lot of fun to make and even more fun to eat. My family loved them. But I would definitely recommend using 2 bananas instead of one. I also added a bit of cinnamon.

This wasn't bad, but I would make some changes next time. I think I'd cut down on the sour cream and increase the soup if needed. I love sour cream, but it was a bit too much in this. I also omitted the onions on top and just sprinkled more cheese.

Potato Casserole

Mmmmm!!! I made this to take to a Potluck. I added some brocolli to it and it was a hit! Everyone loved it, but of course I was hesitant to tell anyone how much butter was in it! Oh, make sure you pour the butter evenly over the cornflakes or you might get some burned places where there's no butter. I could tell the areas that didn't get as much coverage.

Mock Tuna Salad

Very yummy!!! Make sure you mash the garbanzos very well and get creative with what you add to it, if you want. I was very reserved on my first time, but will add more next time. And I agree with others, it's even better the next day. Very filling.
