Oven Scrambled Eggs

I made this recipe for my daughter's graduation open house. It was very well received. The only change I would suggest is to make smaller amounts at a time. The 24 eggs called for in the original recipe overflowed in my pan when I tried to stir it, making a mess in my oven. I cut the recipe in half using a slightly smaller pan and it worked great. If you are planning a brunch and want eggs of some kind these work well. They did not seperate or become runny from sitting for a while if kept warm.

Juicy Fruit Salad

I used this recipe for my daughter's graduation open house. I made the salad several hours before serving and it kept well. We decided it need a little more color so we added maraschino cherries to the mixture. This added a nice red color and also sweetened the salad a bit. I liked it either way.

Oven-roasted Salmon Steaks with Red Potatoes

I liked the recipe fairly well, though I changed it quite a bit. I loved the potatoes, but instead of cutting them up into slices, I cut them into chunks. I also changed the fish topping to 1 tsp dill weed, 1 Tbsp minced onion, 2 tsp olive oil, and 1-2 Tbsp squeezed orange juice. I wasn't crazy with the orange peel and the hot spices. My other tip would be to bake a little longer in the oven. Instead of 8-10 min on the potatoes, I did 12 min. The fish I cooked for 5 min longer than the recipe, after I rinsed it in hot water. Otherwise, no complaints. I will make this recipe again, especially the potatoes!
