Marinated Tuna Steak

Made this the other night and it was better than I had hoped. We had everything on hand as called for except the fresh oregano so we substituted with 1/4 tsp. of dried. Marinated for about 35 minutes. Simple to make and so quick . Grilled on high for 5 minutes on each side and that was it. When I cut into it I was concerned it was overcooked as there was no pink at all but it was surprisingly moist and delicious. This recipe will be used again and might work with other steaks such as salmon and swordfish. Give it a try, you'll agree.

Easiest Teriyaki Marinade Ever

Tasty and simple. I'm saving this one. Made it exactly to the recipe and my wife liked it so much she suggested having guests for dinner using this recipe. We cut up a pork tenderloin and used it for kabobs with red bell peppers, mushrooms and zucchini. Marinated the meat for a for about six hours using 1/2 the mixture and the veggies for about 1/2 hour using the remainder and grilled for about 12 minutes turning after 5 minutes and again 4 minutes later. Next time I use this recipe I might add a 1/4 tsp of cayenne for a little kick and adding onions to the kabob mix. Also, I will use 1/3 of the mix for the meat marinade and 2/3 for the veggies as there is about twice as much veg to meat. We will try this with chicken and pork chops also.

Quick Hoppin' John Soup

Tried this a few weeks ago and what a nice surprise. This soup is delicious and filling. It makes a great winter meal. I made it exactly as the recipe calls for and it requires no modification, yum. If you would like a little more heat, add some cayenne. Other than that, perfect.

Pat's Baked Beans

Lots of compliments from the boys at the Christmas pot luck. Doubled the recipe and made it mostly by the recipe except I used 1 can of Garbanzo beans and 1 can of Black beans and substituted 1/2 the Ketchup with barbeque sauce. Also added 3 extra tablespoons of bacon grease to the pot. It's all about the flavor and I love bacon. It was a bit sweet for me and will cut the brown sugar by 1/2 next time I make it. This will certainly stay in my recipe box. Adding hamburger and/or bulk sausage to the mix is also an option.

Country-Style Ribs

Tasty new dish. I made the recipe for the first time last week but didn't use the cloves or the allspice which we didn't have on hand. The ribs were still quite tender and flavorful. This recipe is a keeper.

Baked Buffalo Wings

Disapointed. Still in search of a worthy recipe for crispy buffalo wings. Followed the recipe almost exactly. Patted the wings dry. Coated with the flour and spice mix and put them in the fridge overnight. After baking in the oven for 50 minutes and turning over mid way, the wings, although tasty were not crispy at all. Yes, I could have increased the cooking time but the rest of the meal was ready and so were the guests. If I try this recipe again, I will likely broil them after baking for 45 minutes until crispy.
