Porcupines

Excellent and super easy. I did add 2 tsps of worcheshire sauce to tomato sauce mixture & did not brown beforehand as others suggested. Came out perfect! Made red potato mashed potatoes, topped with porcupine and lots of sauce. So good!

Chicken Piccata with Angel Hair Pasta

Amazing! Just make sure your family likes capers & lots of lemon. I found out mine does not, but I loved it! Tastes just like the chicken piccata I used to order at the fine dining restaurant for $23. I'll definately make this again, but just for 1.

Excellent mix. I was skeptical about the seeds but they gave the salad a wonderful nutty flavor. Sweet, but refreshing. Perfect spring salad.

Spicy Basil Chicken

Sooo good. A bit too spicy for me but my husband loved it, eating the red Chile peppers whole. I had my warm green tea so that levelled the spicy. So excellent with the basil. Will definately make again.

Amazing Italian Lemon Butter Chicken

Excellent flavor. I poured all the lemon butter sauce in. Next time I think I will increase servings to 8 but use same amount of sauce. It was too greasy. But I loved the capers and artichokes!

Thai Shrimp and Cabbage

Excellent! We still made steamed rice to add as a side. The sauce was so good. My husband said it was like a shrimp egg roll but I pointed out no breading & no frying. Nutrious and tasty!

Chicken Chimichangas with Sour Cream Sauce

Went exactly by the recipe. It took about 2 hours for the seasoned water to cook down to 1 cup. The sauce was amazingly good. The filing was very good. The attempt to fill and roll was a disaster! I had only reserved 8 tortillas and the first two tore although I was being very careful. I managed to successfully roll 5 but even with toothpicks, the first one came apart in the fryer. I made 4 chimichangas and used the remaining pieces of tortillas, filling and cheese to make enchiladas and baked them 15 mins at 425. Next time I will use larger flour tortillas that are extremely fresh. Excellent tasting!

Amazing Bacon-Wrapped Jalapeno Shrimp

My husband discovered this recipe and this site; I picked up the ingredients on the way home from work and he made. Our 14 yr old helped and the result was truly amazing! I made again a couple of wks later for Christmas Eve. Surely not low fat, but so delicious.

Slow Cooker Taco Soup

Excellent! Very easy to prepare. I cooked ground beef with taco seasoning as taco packet suggested early Sunday morning, then put all ingredients, except corn (my 14 yr old doesn't like) in 3 1/2 qt slow cooker. Just fit. 8 hrs later, yum! I did make it clear to my family this was a taco SOUP, not chili. They ate it happily with corn chips, cheddar cheese and sour cream as Janeen suggested. Seasoning just right. We all kept going back for more while watching football and it was all gone by the time I was going to make the entree! Everyone was full. Will definitely make again!
