Egg and Sausage Casserole

Delicious breakfast, popular on Christmas morning! Took much longer than stated to cook so I ended up covering it in foil once the top was browning and the inside was still not set. It took about 45 minutes to set, it came out delicious

Chicken Breasts Pierre

This was possibly the best chicken I have ever made. I loved it and so did my husband. I made a few small modifications to the sauce, but otherwise followed the recipe exactly. I diced fresh roma tomatos (instead of canned) and used chicken broth instead of water. I didn't have white vinegar so I used red wine vinegar. I also omitted the mustard powder because I don't like it. I used a meat tenderizer to make the chicken breats thin so they did not take quite so long to cook. This recipe was fairly time consuming, but it was SO good!

Black Beans and Pork Chops

This was almost too easy. I didn't have any salsa so threw in a diced tomato and added a few dashes of hot sauce. My pork chops were only about 2/3 of an inch thick so they cooked through in about 10 minutes. Very quick and easy! Will make this again.

Chocolate Chocolate Chip Cookies I

These cookies are DELICIOUS! I took them to my office where everyone always tries to be super healthy and they were gone within a couple of hours. I followed other reviews and used 1/2 brown sugar and 1/2 white sugar. I also underbaked them a tad and cooked them on parchment paper so I could slide the paper directly onto the counter as soon as I took the pan out of the oven. I will make these many more times!

Broiled Tilapia Parmesan

This was EXCELLENT! I'm not big on fish and usually when I make it I only eat about half of the serving... but when I make this I eat the whole filet. I really dislike mayo so I substituted low fat sour cream. I also added paprika and rubbed the fish with spicy seafood seasoning (similar to old bay) before cooking it. Best fish I've ever had.

Lasagna Stuffed Shells

I did make modifications, but this was really good. I boiled the shells to al dente insted of only 5 minutes. I used 1 c cottage cheese and 2 c ricotta. I poured store bought sauce in the bottom of the pan since other reviews said there wasn't enough sauce and I put all of the homemade sauce on top of th shells. I used ground turkey instead of beef, and in addition to the onion I cooked it with minced garlic and red pepper flakes. Super delicious and everyone loved it! (Oh, and based on other reviews I squeezed the cheese mixture through the corner of a ziplock which is SO much easier than spooning it into the shells)

Basic Broiled Chicken Breasts

I was making a really complicated risotto so I wanted a simple way to cook the chicken I was going to serve along with it. This recipe was SUPER easy and quick. It was so good! This will definitely be one of my go to recipes from now on. For being so simple it was really flavorful and it came out veryy moist. (It was way better than the complicated risotto that was supposed to be the highlight of the meal).

Slow-Cooker Barbecue Ribs

I'm still new to using the slow cooker and these ribs were awesome! I didn't have high expectations since they weren't grilled but they are just as good as restaurant grilled ribs. I mixed a bunch of seasonings to make a dry rubbed and rubbed them down the night before and let them sit in the fridge overnight. I baked them like the recipe said then put them in the slow cooker. I changed the sauce a fair amount - I used a bottle of bbq sauce, white vinegar, a splash of rice wine vinegar, lots of seasonings, hot sauce, Worcestershire, and some brown sugar. I cooked them on low for 8 hours and they sat on warm another hour or two before I got home. They were very flavorful and they fell right off the bone.

Asian Beef with Snow Peas

This was my first attempt at stir fry and it was really good! I accidentally used rice wine vinegar instead of rice wine but I liked the slight vinegar flavor. I also used ground ginger instead of fresh because that's all I had. I cooked the meat and peas less time than suggested before adding the sauce and the meat was still a tad over cooked for me so I think the time can be played with based on your taste. Over all this receipe was SUPER fast and easy and it tasted great! Will def make this again, especially when I'm looking for an easy weeknight meal.

Baked Chicken Wings

These were super easy and delicious, but next time I make them I'll cut down on the olive oil. They didn't seem very oily when I put them in the oven but once they were done they were sitting in a puddle. They were crispy and had a good texture, but I think you could definitely get away with using less.

To Die For Blueberry Muffins

I made these and took them to work and everybody loved them! I used 1/4 c sugar and substituted Truvia (using Truvia's measurement equivalents) for the other 1/2c sugar. I also mashed the blueberries because I prefer a more uniform blueberry taste with pieces throughout instead of whole berries mixed in. I made them small and got 12. I only used about 1/3 of the topping and it was super sweet so that seemed like plenty. They were the best muffins I've ever had/made!

Mouth-Watering Stuffed Mushrooms

I didn't actually eat these because I dont' like mushrooms but I made them for my fiance and he couldn't stop eating them. He ate half of them in one serving because he liked them so much. I followed the recipe exactly and they got great reviews! Super easy to make also.

Perfect Pumpkin Pie

I was really torn between this recipe and the Libby's recipe, but I went with this one. It was SO good! I followed the recipe exactly, but I added some extra nutmeg and cinnamon to make sure it was flavorful. It was a big hit at Thanksgiving dinner!

Good Old Fashioned Pancakes

This was my first time ever making home made pancakes and they were so good! I'm pretty picky about food and these were easy and tasted "restaurant quality". Nice fluffiness and texture. I will definitely be making these again! I added strawberries to some and dark chocolate chips to others... mmm!
