Tomato and Garlic Pasta

I'm a convert...never using canned tomatoes for pasta again. Added a few dashes of cayenne pepper for a slight kick.

As often as we eat Mexican-inspired dishes, this saves us money in the long run. Also, you can customize it to your family's taste, i.e. low salt, etc.

Yummy Sweet Potato Casserole

Good recipe. I baked 4 large sweet potatoes instead of boiled (to preserve the nutrients). It was a bit sweet but will cut back on the sugar next time.

Classic Thanksgiving Dressing With Parsley, Sage and Thyme

Caribbean Zucchini Bread

Very tasty. To add more nutritional value, I altered the recipe just a bit - used 2 cups whole wheat flour instead of 1, added an extra banana for moisture, three cups of zucchini, cut the sugars to 1 1/4 cups (still sweet), and roasted the walnuts on the top. I made muffins instead. Cooked them for 27 to 30 minutes. Good recipe!

Mashed Sweet Potatoes

The family loved it. A healthier alternative to mashed potatoes. I used brown sugar instead of maple syrup and seasoned to taste with cinnamon. Goes great with a fruit stuffed pork roast!

Maple-Curry Chicken

Easy dish to make. The kids usually do not care for curry, but the maple syrup gave the dish a twist. I did not use hot curry paste; I thought a dry curry powder was spicy enough.

This recipe was easy to make. To prevent burning or drying the cabbage and keeping the cooking time within range, put foil over the baking dish. I used a "light and healthy" kielbasa to lessen the grease.

Beef with Green Onion

The family loved it. You can add a variety of vegetables to this recipe. I added yellow pepper, red pepper and garlic. I doubled the sauce to spoon over the rice. Will definitely make this again!

Sirloin Tips and Mushrooms

Excellent recipe. It was a hit at a dinner party, served with a simple salad and hot bread. I used fresh mushrooms instead and stewed it a bit longer to thicken the sauce.
