King Ranch Chicken Casserole

Amazing, and easily adjustable to taste. My kids are picky eaters and I just watched everyone go back for seconds! Hallelujah! My daughter LOVES cheese enchiladas and queso dip, however, she somehow scrapes anything red or green off her chip and only eats the cheese. So, I usually don't review a recipe I modify, but for those of you with kids, these tips may help: I was in a hurry so I grabbed two cheap rotisserie chickens and used the breast meat. Fast, easy, cheap and lots of flavor. I think dark meat might be too greasy, especially if you add extra cheese. I substituted the green bell pepper for a 4oz can of chopped green chilies. I sauteed the red bell pepper and onion together and added some minced garlic until pepper and onion were soft. Added the green chiles and Rotel and put it all in a blender to "hide" it. PERFECT! I only used a 1 1/2 tsp cumin and plain chili powder in place of the Ancho and Chipotle (my kids are more familiar with these flavors). HUGE HIT! Will definitely make this again. I'm sure the original recipe is also amazing, but doing it this way, my kids got some veggies - bwahahaha. 40 minutes was the exact right time and there was plenty of sauce. I will absolutely make this a regular meal in our house.

Chicken Souvlaki with Tzatziki Sauce

Marinated overnight - EASY and DELICIOUS! My husband is a very candid food critic and as far as chicken goes, he likes thighs. Period. But, we are trying to lose weight and eat healthier. I couldn't believe it when he said he LOVED it!!! I think I'm still shocked. DEFINITELY use high quality greek yogurt. Bought a cheaper brand and threw out the first batch of sauce. Much better with Chobani. If Yoplait made plain greek yogurt in large tubs, I'd buy theirs. The cheaper brand had a "powdery" texture. Yoplait has VERY creamy texture but I can't find the plain in a large container.

Amaretto Butter Balls

HERDEZ® Creamy Tomatillo Avocado Salsa

Excellent! Easy! No changes. We didn't find it spicy at all, but we live in Texas, so we are used to pretty spicy food. This will be a HUGE hit at our parties. Talk about a low stress appetizer people will talk about!

Lacy Oatmeal Cookies

This was a PERFECT cookie - I followed the recipe to a "T" - no changes. As for baking directions, I did use parchment paper and it was flawless. The measuring teaspoon size scoops are essential - it doesn't seem like much at all, but the batter spreads beautifully, and if you use an actual measuring teaspoon the cookies come out uniform. Make sure and leave plenty of space between cookies -2 - 3" or so. And, yes, check the first batch after 8 minutes or so in the oven - edges should be golden, and the middle firms up as they cool. Mine were great between 8-10 minutes. These are delicious, fast, easy and beautiful. I got rave reviews, some even said it was their new favorite cookie. A friend's mom made these for me 30 years ago and I've always remembered them. I finally searched for the recipe. I'm so glad I found this one!

Blue Cheese Ball

As someone who is trying to find "PERFECT, MAKE AHEAD, so you can enjoy your guests" recipes, this is a KEEPER! Very EASY, yet exquisite. I'm not a fan of someone giving a recipe one star, and then you find they changed everything about the recipe - but most who changed this recipe a little, gave it 5 stars. So, I did add a little garlic powder and tobasco sauce as recommended by reviews, and since I don't care for walnuts, I used pecans. WOW!! I entertain frequently and I'm guilty of trying very complicated appetizers that keep me in the kitchen, away from the party. This recipe will be on the base list of what I am serving EVERY time, so I can spend time with my guests with a glass of wine in my hand. LOVE!! And my husband, who is not a big fan of blue cheese, loved it too. I plan on serving it alongside roasted grapes with crackers.

Paydirt Peanut Butter Cookies

These were really good, but my package of cookie mix didn't come with peanut butter, so I added 1/4 of a cup. I don't think it was enough. The cookies are a wonderful texture, just didn't have that rich peanut butter flavor I was craving. It was kind of a cross between a peanut butter cookie and a sugar cookie. My husband LOVED them, and the batch made enough for our family, two neighbors and my husband's office, so I think it's worth another try. 8 minutes in the oven was perfect.
