Basil Chicken and Pasta

Well -- wish I could report that we liked this recipe, but cannot state that. I don't think either one of liked the Mexican flavors with the crescent-roll crust. I might re-try using tortillas - (?)

Tuna Noodle Casserole I

This recipe is a keeper, due to the made-from-scratch sauce. Rather than canned tuna, I used some leftover tuna steak from a previous dinner. I also added (chopped & sauted) celery, red/yellow pepper, and sweet onion to the mix, and sprinkled the tuna with cumin. Another option: cilantro. Husband took seconds - always a mark of a good dinner item. thanks for the post, Cat!

Salsa Chicken

I am giving this 4 stars because of the ease of preparation, and good flavor. (Those spice packets do come in handy for quick prep!) Hubby took two helpings - that is always a sign that recipe is a keeper. Thx Faye!

Quick Chicken And Wine

Easy to make, but still not worth the effort. I did not like the way the coating came off in the pan, and the wine-sauce needs to be thickened. Otherwise, the dish is just too watery. Sorry....

Korean BBQ Beef (Pul-Kogi)

Five star recipe! Primarily because of taste, but also because preparation can be done ahead, general presentation can be beautiful, and ingredients are those I have on hand! Very very tasty dish -- and a dish I can use for overnight guests, since I can prep all items ahead of time, be out all day, and come home have it ready in about five minutes. Thanks, Tanya!

Tantalizingly Tangy Meatloaf

Italian Meatball Sandwich Casserole

The taste & general "makeup" of this recipe reminded me of lasagne. Since my husband likes lasagne, he declared a keeper. I found it pretty easy to assemble, so that was another plus. Thanks, Holly, for the fine post.

Potato Chip Chicken Casserole

Good taste, easy prep, & also provides a way to use up leftovers! My husband took two helpings -- & that is something I watch for when trying a new recipe. My only changes: I used bread crumbs on top (as I had no potato chips) and I used Campbells "Southwest Pepperjack" soup. I will leave out the mayo next time to save calories, as I figure it won't be seriously missed. Thx, Paula, for the post.

Orange Roughy with Montreal Salsa

I thought this recipe was pretty dang good, and my husband commented positively afterwards without even being asked...(no small thing!) I did change a couple things: I did not grill; I poached using the salsa as the poaching liquid. I also added some pepper jelly to the salsa-makings, and this gave it a sweet-hot taste that we liked. Also I sauted some sweet onion chunks in the poaching pan, just for an added vegetable.

Chicken Nachos

I am giving this 5 stars because of the simplicity of ingredients (which were things I always have on hand!), ease of prep, and the fact that it was a big hit with my husband!! Incidentally; I substituted 1/2 tsp cumin for half the cayenne. Thx for the recipe, Michelle.

Herbed Chicken and Fettuccini

Sauce was way too runny -- I should have added some cornstarch along with the chicken broth for thickening. Other than the thin sauce, this turned out to be a standard stir-fry (although flavors are pretty subtle.) Sorry -- Nothing remarkable to make me want to repeat.

Chicken Gruyere with Sauteed Mushrooms

Sorry for the low rating -- but this was a huge disappointment. I am surprised with the other reviewers who raved about this, as we found this dish WAY too bland. The tasteless chicken was one thing, but I didn't think the presentation was "company-worthy" either... Based on all the good reviews, I was hoping for something great....

Green Bean Okazu

This was a bit sweet for me, but my husband took two helpings. I used beef tenderloin rather than ground beef. Also added sliced onion when cooking the beef for an extra vegetable. I also put some cornstarch into the water/sugar/soy-sauce mixture so that it would thicken slightly. Served over rice. Will definitely make this again, as it was so easy to prepare, and could be very versatile. Thanks, April!
