About this Cook
I'm a stay-at-home mom with 4 children 7 and under and another bundle of joy on the way! My husband Mike and I have been married for 9 years and we both LOVE spicy food. Our children have inherited our love of spices and - thankfully - are willing to eat almost anything I cook. Our kitchen is definitely the heart of our home. I have a work-from-home jewelry business and love that I am able to be home with my kids and teach them the joys of being in the kitchen.
My favorite things to cook
Pasta, all kinds of chicken, quick breads & muffins, fun foods for the kids, Mexican - especially enchiladas, anything that makes my family happy.
My favorite family cooking traditions
Every July for my husband's birthday, we celebrate with a "Hot-luck." We invite all our chile-head friends and compete for the best spicy dishes. It's so much fun to watch grown men cry over burning taste buds! We also have a huge feast for Thanksgiving. My family and my husband's family all get together and try out as many new recipes as we can, and love to enjoy the traditional recipes of the day, as well.
My cooking triumphs
Actually, many of the recipes my family loves the most are recipes that I got from this website. I've become famous for the Banana Wheat Bread that I make into mini-muffins. Our pastor asks for them every Christmas and they always sell for big bucks at the bake sales.
My cooking tragedies
Cheesecake is my husband's favorite dessert. The first time I tried to make one from scratch, I didn't read the directions very carefully...the cream cheese was not room temperature, and I added all the eggs at the same time. The result: cheesecake with the texture of cottage cheese! Awful, awful stuff!

Eggless Peanut Butter Cookies
I, also, had to make some significant alterations to the recipe due to the ingredients I had on hand. (3 1/3 c. flour, 1/2 c. butter, 1/2 c. applesauce, 2 c. sugar, 1/2 c. molasses, - no brown sugar in the house! - added 1 tsp. vanilla) HOWEVER, my family ate about 1/4 of the batter before I even made cookies, and by the time the last batch was out of the oven, at least half of the cookies were gone! These were by far the best PB cookies I have ever made. Perfect bit of crunch to the outside; lovely, soft, chewy inside texture. KEEPER!

Strawberry Oatmeal Breakfast Smoothie
My kids loved this, they thought it was ice cream! I also pre-ground the oatmeal, but used just whole milk and honey, instead of sugar. Excellent.

Breakfast Casserole III
After reading other reviews, I came up with this version: used turkey breakfast sausage sauteed w/a little onion; instead of baking the potatoes I shredded 2 med. potatoes and lightly sauteed them w/e.v.o.o. and s&p. Layered potatoes, then sausage, then added a layer of some leftover homemade creamed spinach, then mozzerella, then the eggs. It was so delish. The whole family, from 14 month old on up, just loved it. I served it w/the Strawberry Oatmeal Breakfast Smoothie from this site to round out an easy supper. Thanks for this one!
