Passover Matzo Lasagna

This was a very good Passover lasagna with some minor modifications:) I browned and seasoned a 1 lb. of turkey meat and added that to two jars of sauce. I also seasoned the cheese mixture with basil, oregano, salt, and pepper. It came out more beautiful than a traditional lasagna. I will definitely be making this for future. Thank you for providing a base recipe!

Killer Cheesecake

This cheesecake got rave reviews! I took the advice from other bakers and cut down on the margarine a bit for the crust. I also added a cup of non-fat lemon yogurt and omitted some of the sourcream for the topping, which gave it a nice flavor. I garnished the top with kiwi slices, but would probably use strawberries next time. I used reduced fat ingredients and it turned out great!

Burrito Pie

The recipe was excellent. I would have given it five stars, however my boyfriend thought it was great, but not amazing. It was very easy to make and you can modify the recipe by adding corn and other favorites, to make it unique. I cut the recipe in half and used a 9 1/2 x 13 pan. I was worried about the tortillas, but I used six 8 inch flour tortillas. I placed one in the middle and cut two in half and placed the flat edged side on each side of the pan. It worked pefectly.

Chocolate Cream Passover Torte

This is the best passover cake I have ever made. It was fairly easy and looked beautiful. I garnished the cake with a few raspberries on top and kiwi and raspberries on the corner of the plate. Everyone was impressed and couldn't believe how light and delicious it tasted. I would definitely make this again. Make sure you grease the wax paper thoroughly, so the cake doesn't break apart.

Easy Coq Au Vin

Easy and delicious French recipe! I had been craving this dish since I recently ate it at a restaurant. I didn't think that it would come close, but it was actually quite tasty. I only had four chicken thighs on hand, but I added two small red bliss potatoes, two carrots, two garlic cloves, and some thyme. I also cooked the dish for over an hour on the stove to let it really soak up all the flavors. The house smelled so good! I will definitely try this one again for company.

Hearty Vegetable Lasagna

This was the best lasagna I have ever made! I followed the directions for the most part, simply adding extra veggies (shredded carrots, zucchini, onion, spinach, and red bell pepper). I also made sure to season the sauce and ricotta mixture. Instead of using only mozzarella, I used shredded Monterey Jack too. I needed to make more of the ricotta mixture and only used ten pieces of lasagna. My husband thought it was a 4, but for a lasagna...I have to give it a 5!

Pancakes

Not a huge fan of these pancakes. I didn't have self rising flour, but I added baking powder and that did make for a fluffier pancake. However, I felt that the pancakes lacked flavor. I don't think I'll be making these again.

Real Hummus

I wish I had tried this recipe a long time ago instead of buying hummus! I tinkered with the measurements a little bit until it was to my liking, but overall a great recipe. I recently purchased OLIO extra virgine limone that I drizzled on top, which adds a nice touch. I can see myself adding different veggies to this recipe to change it up. Thanks!

Raisin Farfel Kugel

I made this last night to have for Passover and followed the recipe exactly as stated. It looked so good right out of the oven that I had to give it a try. Wow-such a yummy and easy Passover treat. We will be having this for breakfast! This recipe is a keeper and I am going to experiment with it as well! Thank you.

Bread Pudding II

This was a great starter recipe for bread pudding. I wanted to put my own spin on this dish, so I tried two different batches. One had butternut squaush, golden raisins, pecans, and pumpkin spice-out of this world! The other one had bananas and chocolate chunks-delicious! I used sub rolls and cut down a bit on the sugar,milk, and egg mixture. I also let it soak overnight in the fridge. This was so easy and I think you could try so many different ingredients to create yummy bread pudding. I will definitely be using this recipe again!!!

Pumpkin Toffee Cheesecake

I should start by mentioning that I made this cheesecake for my great aunts 102nd birthday party! She loved it! This was the first cheesecake I have ever made and it a lot easier than I expected. I followed the recipe for the most part. I couldn't find shortbread cookies, so I made a vanilla wafer/graham cracker crust that was perfect. I also added half of the toffee bits to the cheesecake. I didn't use the caramel sauce, but I can see how this would kick it up another notch. I will definitely be making this for Thanksgiving this year. Thank you for sharing a great recipe!

Tortilla Soup II

I know that most of you won't agree with me, but I thought this soup was awful. I just returned from Los Cabos, Mexico last night and was so excited to make tortilla soup. This recipe sounded good, but it tasted nothing like the soup I loved in Mexico.

Maple Cookies

I was looking for an easy Canadian recipe to serve to my first grade students as we embarked the plane for our Canada unit. Wow, these were so simple to make and I didn't even have real maple syrup on hand-I used lite maple syrup and didn't bother to sift the flour. They turned out great! I sprinkled red sugar on top and they were perfect. One student told me he had a new second favorite cookie! Thanks!

Flourless Chocolate Cake II

A simply delicious dessert that is effortless! I followed others' suggestions and used extra chocolate instead of cocoa powder. I also use Nestle semi sweet chocolate chips to make it even easier and microwave with the butter. I also made a simple chocolate ganache to cover the cake with 4 oz chocolate and 4 Tbsp. Smart Balance Butter. It came out great. I lined the bottom of the pan with wax paper and it worked, but I had to peel it off very carefully. I served it with fried ice cream and it was a huge hit!

Award Winning Peaches and Cream Pie

This was a super easy recipe and perfect to make with my 2 1/2 year old daughter. We added a drop of almond extract to make it a little different. After they cooled we frosted them and added sprinkles. We only baked for 8 minutes and they came out soft and buttery! I will definitely be making these again!
