Banana Crumb Muffins

Wonderful recipe. The muffins turned out delicious, soft and well-balanced. I didn't make the crumb topping as it seemed unnecessary and I substituted an extra pureed banana for the egg and they turned out perfect. Maybe next time I'll try them with the topping too. If the rest of the recipe is this good, why wouldn't the topping be? Thanks so much.

Grandma's Iron Skillet Apple Pie

A recipe as perfect as they come. Some other posters have said it could use less sugar and I agree that it would be delicious even with considerably less, but it's delectable with them too. I'd never even thought of making apple pie in a skillet before I moved to Korea, but suddenly I was confronted with the fact that you can't find pie pans in this country, so this recipe was a godsend on Thanksgiving. Thank you so much from both me and my little expat community! We all enjoyed it very much!

Orange Muffins

A definite 5-star recipe. As I'm vegan, I substituted one medium pureed banana for the eggs. One time I made the recipe I added dried cranberries and another time I didn't. Both times they turned out splendidly. Personally I like them with the cranberries, which are such a good compliment to the orange flavor in these muffins, but it's just a matter of personal taste. Stellar recipe, thank you so much.

Marrakesh Vegetable Curry

Have made this curry twice now and can strongly recommend it. I find I like it better with double spices except the cinnamon and cayenne, as some others have recommended. When you increase the spice amounts, it produces a curry bursting with flavors and spice. The cinnamon ties the entire dish together. Aside from the spices, I did find that some of the veggies -- the eggplant in particular -- wound up too soft when cooked for the recommended amount of time. But that's a small complaint and overall it's an excellent dish I'll make time and again. Thanks so much!

Spicy Vegan Potato Curry

This is a true 5-star recipe. The only change I made was to substitute a bit of extra potato instead of the chickpeas, which are hard to find here in Korea. Otherwise I followed the directions exactly and wound up with a delightfully spicy, flavorful curry with the perfect balance of ingredients. Made it twice so far and expect it will become a mainstay here on out. A real feather in the cap of any vegan chef. Thanks so much!
