Snappy Green Beans

Good and easy; I added some leftover corn and some chili beans to the ground beef and topped it with fritos. Did make a good lunch, we fought over the leftovers.

Basic Hummus

This is a good recipe for hummus, but is even better when you toast the sesame seeds in a dry skillet until they pop, puree with the olive oil to make a drizzly paste, then add the rest of the stuff. I like to coat the top with olive oil and serve with toasted pita. Yummy! And good for you.

Pork Chops to Live For

Okay, always nice to have dinner ready when you get home, but this had too much gravy- one can soup, 1 cup milk might have been enough, and my pork chops seemed to done. Also a little bland, but not bad altogether. Good idea that needs improved upon.

Easy and Delicious Chicken

Skillet Tamale Pie

Tamale pie always disappoints me, but this was good. I spiced it up, used tomatoes/green chilies instead of regular & served with lots of salsa. Yummy.

Asian Chicken Salad

This is really good. I used turkey instead of chicken and plain boiled udon noodles (like fettucine) instead of the fried noodles, and whoever said the dressing needs to be doubled was right. I didn't have any rice vinegar so I used cider vinegar. My boyfriend isn't big on salads, he always asks where the meat is, but he really liked this too. I will make it again

Salsa Chicken Rice Casserole

This was pretty good. I added some corn kernels and chopped green chilies, and thanks to some of the other ratings I sauteed the chicken breasts with lots of spices. Still a touch bland but I didn't have enough salsa. Next time I will use lots of salsa and maybe more chicken breast. Made a ton, lots of lunches this week.

Apple Crumble Pie

Good, but recipe needs to mention that the butter should be softened before cutting into the flour mixture. Cold butter doesn't make streusel. I put some oatmeal into the flour, next time I'll put more.

Blueberry Boy Bait

To those in "blueberries at the bottom" club: more than likely you're not beating the flour/milk/egg mixture long enough. If you use an electric mixer for 3 minutes like the recipe says the mixture will be thick enough the berries won't sink. If it isn't, keep mixing. This is soooo yummy, I could eat the whole pan.

Baked Dijon Salmon

I liked this, but it was really rich. I wonder how it would be with half olive oil, half butter? I left out the nuts because I didn't feel like chopping them, and I'm glad I did because that would have made it even richer.

Bulgur Chickpea Salad

This is basically tabbouli with grated carrots and chickpeas. I like it better with olive oil in the dressing, and you can use a food processor to shred the parsley and green onions together, with a clove of fresh garlic, then grate the carrots. Delicious.

Nutty Pumpkin Waffles

Good waffles, but next time I might leave out the nuts. I used walnuts and they didn't seem to go with the flavor of the waffles. The sauce was really good!

Greek Butter Cookies

This recipe has been in my family for many years! We're not Greek and we had no idea this was a Greek recipe. We chill the dough in balls and roll it out thin, then cut it into shapes with cookie cutters and decorate with Christmas decorations. The best sugar cookies ever.

Johnny's Biscuits

I had my doubts about these biscuits because of the sugar, and the final step of dipping them in flour. I've always made rolled biscuits, not drop. But these were delicious biscuits! Great recipe! I had to use margarine because I didn't have either shortening or butter, but they were still great. My new biscuit recipe!

Absolutely Best Brownies

I'm not a huge brownie fan, but I liked these more than most - not too sweet, not too dry, just plain good. Made them for a birthday party, served them warm with vanilla ice cream and they disappeared.
