Greek Lentil Soup (Fakes)

This is a wonderfully simple soup. Instead of tomato paste, I used a can of crushed tomatoes, and fresh herbs from my garden. Sauteed the veggies in the oil to bring out the sugars before I poured in the lentils, tomato, and chicken stock instead of water. Delicious! I'm not Greek, but I wish I were!

Quick and Easy Brownies

I loved how easy they were to make, and the chocolate flavor was light and cocoa-ey, instead of dense and fudgy. Brownies are usually too intense for me, but I liked these, even though I only got 2 - my BF devoured the rest. He loved them!

Playgroup Granola Bars

I made these using whole wheat flour, 1/2 the amount of oil and reduced the sugar, also using a "baking blend" of brown sugar and sucralose. I ended up not liking them because of the artificial sweetener flavor, but my BF loved them. He said it was like a big oatmeal cookie with less fat and sugar. I gave it four stars even though I didn't care for them, but that was my fault and not the recipe. I will make them again and add some unsweetened applesauce to make up for the reduced oil, and also use real sugar this time. Can't beat the real stuff! Just use less of it.

Meatball Nirvana

I made these for a potluck. After cooking as directed, I made a homemade marinara sauce and simmered the meatballs in that for about two hours, then took it to the potluck. I served the meatballs out of the crock pot, with dinner rolls and quartered slices of provolone cheese for "Meatball sliders"! Everyone raved about them. They are very moist and flavorful. We ate the leftovers over spaghetti. My boyfriend loves them, and I do too. Thanks for the great meatball recipe!

Gramma's Apple Bread Pudding

This was described as "heavenly" and made people forget all about Thanksgiving pies. So delicious. We took the advice in reviews and used a water bath, which made it soft, creamy, and perfect. Added a shot of brandy and some pecans to the sauce. Oh yeah, and my boyfriend used half-and-half instead of milk! Did I mention it's really good?

Whole Wheat Pumpkin-Applesauce Muffins

When I made these, I used half whole wheat flour and half AP flour. It didn't say how full to fill the cups, which gives an idea how much they rise; I filled it almost full and the muffins were nicely domed like the main photo. I doubled the recipe to share with friends and got a little more than 2 dozen... not that I am complaining, these are delicious muffins! nice and moist with intense pumpkin spice flavor. So good with tea. A winner!

Sesame Pasta Chicken Salad

Delicious! Pasta salads don't usually excite me, but this one has such great reviews, I decided to try it. I love cilantro and so I knew it couldn't be all bad, and it's perfect! I'm glad I followed the other reviews and cut the oil back to 1/3 cup. Like other reviewers, I also added grated carrot, fresh ginger, diced red bell pepper, and sugar snap peas. This is exactly what I'm looking for to take in my lunch! Thanks for the recipe and the helpful reviews. Another AR winner.

Health Nut Blueberry Muffins

Five star blueberry muffins. Made the recipe exactly as written, except used pecans instead of walnuts, and loved it. Lots of muffins are just cupcakes, or else turn out dry. These were moist, but sturdy and nutty tasting from the wheat germ and oat bran. It's local blueberry season right now so the fantastic blueberries just made the muffins better, but I think I'll do what another reviewer suggested and try them when other fruit when blueberry season is over. Thanks for the great muffins!

Hungarian Mushroom Soup

This soup is delicious. I followed the recipe exactly. My only modification was adding a splash of dry white wine, and using half the amount of butter. We really liked how rich it was, despite using fat-free milk and light sour cream. High-quality Hungarian sweet paprika is a must!

Tangy Slow Cooker Pork Roast

When I made this, I think I added too much water, because it was more of a broth than a glaze. I rate it a 4 because I made it wrong. My boyfriend loved it however. I accidentally bought tenderloin instead of loin and the meat was moist and tasty.

Minestrone Soup I

I didn't have any cabbage, so I used green beans and a handful of frozen edamame. I also used a can of petite diced tomatoes. It's really good if you add dried basil. Cooked it in the slow cooker for about 4 hours and the vegetables got tender, but not mushy. If you plan on eating this soup over several days, it's good to cook the pasta separately, and just add it before warming the soup, so it doesn't soak up all the broth and get mushy. Great, veggie-loaded soup for the lunch box!

Vegetarian Chickpea Sandwich Filling

This is my favorite type of recipe, one that takes humble ingredients and elevates them into something you don't expect. I love chickpeas in any form, but was still surprised at how good this is. Very similar to tuna salad, but better. I used green onion and fresh parsley. I'll be keeping this on hand for the lunch bag.

Banana Oatmeal Crumb Cake

I made this cake into muffins. I'll have to make it again because I didn't let the butter and sugar cream long enough. It was still tasty though and we really liked the crumb topping. Next time I think I'll put nuts inside the cake too because they kept falling off the top.

Spicy Cranberry Chutney

Banana Banana Bread

Excellent banana bread, even better than my grandma's recipe. I subsituted half whole wheat flour and really liked the substance and crunch. I also added 1/2 tsp cinnamon and 1/8 tsp each of mace and cardamom to spice it up. Definitely the best banana bread I've ever made!

Taco Lasagna

Good recipe, good idea! I cut the recipe in half, and then cut the amount of cheese by even more, also adding some black beans to increase fiber. We liked it a lot, even though my boyfriend oversalted the meat. We'll definitely make it again.

Garbanzo Tomato Pasta Soup

The broth was bland (I used chicken broth) so I spiced it up with red pepper flakes and fresh rosemary, thyme, oregano and parsley. Also used whole wheat penne. I should have used more garlic. Still, considering its simplicity, pantry ingredients and short prep time, it's a good soup. It'll be good for lunches this week.

Dried Cherry Muffins

Nice little muffins. I love dried cherries and like recipes I can make with things I already have in the house. I used whole wheat flour and cut back the shortening a little, added some almond extract, and since I didn't have buttermilk I used plain yogurt. They turned out well. Some applesauce might be a good addition next time, to make up for using less shortening.

Sour Cream Coffee Cake

Delicious! I followed the recipe exactly, except for adding a layer of diced Granny Smith apples, and some granola to the topping, just because I had some. It was a fantastic apple coffee cake. I'm going to try it again using other fruits. My boyfriend said "This could be the best thing you've ever made!" **I made this again and used fat free plain yogurt instead of sour cream, since I was out of the sour cream, and I have to say... I liked it better! The crumb was softer and it wasn't as thick so it was easier to spread in the pan, and didn't stick to the apples and pull them up with I spread it over them! So if the batter is too thick for you, try fat-free plain yogurt!
